It definitely sounds like you're not eating enough!.calories or enough of most nutrients!. You can still eat more and be healthy!. Just eat more WHOLE grains, the first ingredient should be 100% whole!.!.wheat, bran, rye ,etc!. Eat lots of fruits and veggies!. I don't know if you're worried about your weight or anything, but if you are the amount you're eating is going to slow your metabolism down!. Even if you're dieting you should be eating at least 1,500 calories
FYI the foods you're eating are good, and healthy just eat more of themWww@FoodAQ@Com

The food pyramid for vegans is:

2 servings fats
2 servings fruit
4 serving vegetables
5 servings nuts or legumes
6 servings grains

The bottom line is, it's hard to tell exactly unless I know the amounts!.

You seem fine on fruits and grains (if you didn't know, corn is a grain, not a vegetable)!.

It looks to me like you are low on vegetables, but you could have had 4 servings of cucumbers for all I know (I personally don't count starchy vegetables such as potatoes toward my vegetable servings)!.

It looks like you are really low on nuts/legumes, unless you had eight tablespoons of peanut butter on your sandwich!.!.Www@FoodAQ@Com

You should definitely add more vegetarian sources of protein to your diet!. How about some tempeh or seitan with your mashed potatoes and corn!? And some hummus or more peanut butter to go with your graham crackers!. A cup of soy milk can be drank with your apple!. Try to get some protein in at every meal and snack!. Since vegetarians might find getting enough protein more challenging, it's important to incorporate it into as many of your meals as possible!.Www@FoodAQ@Com

You aren't eating enough calories, green vegetables, calcium or protein!. I also don't see where you're getting enough healthy fats, or essential fatty acids!.

My day was more like:
B: Oatmeal with rice milk, strawberries, cashews, ground flax
L: Chickpea cutlet sandwich on whole grain bread with cranberry sauce, green salad
Snack: whole wheat crackers with peanut butter, apple
D: BBQ Tofu, roasted potatoes, broccoli

And I've got gastritis and haven't been able to eat well lately!. You've got no excuse not to eat better!Www@FoodAQ@Com

You will not get enough protein!. You need to add some eggs,or cheese, or soy/tofu, or some beans!.
Potatoes and corn are both starches/carbohydrates
You need to add some vegetables as well!
Even for meat eaters it is recommended to eat % portions of veg or fruit per day!. And 1/2 an apple is not a serving!.!.!.!.Www@FoodAQ@Com

Ballanced diet yes, weight loss diet it what it sounds a little more like!. If you are anything like me corn and mashed potatoes will not fill a person up at all!. I see nothing really unhealthy you've listed but I don't really see foods that might make you full at all!. Your breakfast idea is great cause you might get full on that!.Www@FoodAQ@Com

Other than the peanut butter, you don't seem to be eating many nuts or beans!. You may want to look into eating more of those!.

I also have to agree with the previous post that it doesn't sound like you eating much food!. If that's the case, don't feel bad about eating more if it's healthy foods!.Www@FoodAQ@Com
