i am a vegetarian, and today my cousine is coming for dinner, i have absolutly NO IDEA, what to cook!. do you have any good easy vegetarian recipe!. could you write the recipe or give me the site of the recipe!. thank you very much!.Www@FoodAQ@Com

my fav!. recipe is vegetable spring rolls!.!.!.it's sooo simple
4 sheets rice paper
Water sufficient to dampen the rice paper
2-3 torn lettuce leaves
Small bunch of Thai basil --i just skip this ingredient
1 cup bean sprouts
Bunch of coriander sprigs --skip
1 cucumber, sliced into 8 2 x 1/2-inch pieces
2 spring onions, sliced into 8 2-inch pieces
1 carrot, sliced into 8 2-inch strips
1 cup boiled rice noodles
Vietnamese Spicy Red Sauce
Peanut Sauce
? Dampen the rice paper in the water, then pat dry with a kitchen towel!.
? Place small amounts of the torn lettuce, basil, sprouts, and coriander approximately 1 inch from the end of a sheet of rice paper!. Add 2 pieces of the cucumber, 2 pieces of the spring onion, 2 carrot slices, and a small amount of the rice noodles!. Fold the end and sides of the paper over the filling and roll tightly into a cylinder shape!.
? Repeat with the remaining ingredients!.
? Slice each roll into 2 to 3 pieces and serve with the Vietnamese Spicy Red Sauce and the Peanut Sauce!.
Variation: For fried spring rolls, heat 1 Tbsp!. of the vegetable oil in a small pan until hot!. Add the spring rolls and fry until slightly browned!.

Eggplant Parmesan
Preparation and cooking time: 2 hours 30 minutes
Ingredients
3- Large Eggplant
1- Large container of Italian style Bread Crumbs
2- Jars of Spaghetti Sauce (type optional)
1- Small container of Portabella Mushrooms
? - cup of Salt
1- Garlic Powder
4- Eggs
1- Large bag of shredded Mozzarella
1- Medium size bag of Parmesan cheese (shredded)
Deep dish baking pan
Prep:
Cooking oil of your choice, in a deep frying pan heated on medium- medium high!.
Pre-heat oven at 375 degrees, peel the skin off the eggplant, and cut the peeled eggplant into ? inch slices!. Place the slices into a medium bowl and bath with the beaten eggs, coat the eggplant with the bread crumbs!.
Place the coated eggplant into the heated oil to lightly brown on both sides!. Coat the bottom of the pan with a thin coat of spaghetti sauce, aligned the cooked slices on the bottom of the pan!.
Cover the array of eggplant with a thin layer of mozzarella cheese, if you desire less cheese then omit the cheese between each layer!. Between each layer place spaghetti sauce, cheese is optional!. Combine the mozzarella, and parmesan cheese on the top layer!. Cover the pan with aluminum foil; pierce the foil on top to allow the steam to vent!.
Bake in preheated oven for one hour, and thirty minutes!. Remove the foil and serve when ready!.Www@FoodAQ@Com
