My husband is going vegetarian! What should I make him for dinner?!
My husband asked me last night for information on how vegetarians help the environment!.!.!.!.so I showed him the evidence that all of you guys gave me in another one of my questions!.
He was ASTOUNDED at the impact eating meat can have, and to my surprise, told me that it was enough to make him want to be a vegetarian!!! He said it made him feel sick knowing how eating meat is making the earth (as well as other people) suffer!. He decided right then that he wasn't going to eat red meat at all anymore, and he's going to slowly transition to vegetarianism!.
Soooo!.!.!.!.!.my question to you is:
What should I cook him tonight to celebrate his GREAT decision!?!

Ohhhhhh!.!.!.!.!.!.!.Vegetarian Nachos!!
Take organic corn chips and cover them with Vegetarian "chili man" chili w/beans, Refried Vegetarian beans (black and pinto), canned pinto and black beans, add sliced black olives, shredded taco cheese, shredded lettuce, chopped tomatoes, hot or medium taco sauce and chives!. Bake or mirowave till cheese is comletely melted!. It is awaesome, muy whole meat eating family just loves these!! Good for him on being a vegetarian!.
FYI, In my opinion!.!.!.soy rizo (vegi churrizo) is discusting, I made it with scrambled eggs and couldnt eat it!. But there is a vegi italian sausage at Jewel inthe produce organic section that tastes just like I remember sausage to taste like!. Good luck!Www@FoodAQ@Com

If he leans Mexican, make a good vegetarian stuffed enchillada dish with rice, beans and a good avocado salad one the side!.
If he prefers Chinese a nice stir fry (using chicken or shrimp if you want to ease into it, else tofu)!.

If you make your own seitan (and I recommend you do), there's a great recipe for Tomato Walnut-Crusted "Chicken" in Sarah Kramer's "La Dolce Vegan!."
I have a vegan version of fessendjen I created that uses seitan!. I'm at work now, or I'd send you the recipe!. If you want it, I'll still get it to you so you can make it another time!.

Okay well if you can get to a health food store get yourself some TVP!. This is almost the same as tofu nutritionally only it comes in a dry form!. You can get a pound of the plain granules or chunks!. This pound will reconstitute to almost 6 lbs!. You can look up the directions on-line!.
When you reconstitute it you can flavor it anyway you like!. With soy sauce, vegetarian bullion, garlic, taco seasoning, etc!. Pretty much any seasoning you can think of!. You can make no-meat balls, "burgers", no-meat loaf(with vegetarian gravy of course), vegetarian tacos and lots of other stuff!. This will make the transition easier because it has the closest texture to real meat, is very easy to cook with, and is a lot cheaper than tofu!
If you do use tofu in the future
Tempa: grilling
Extra Firm to Firm Tofu: good for stir fry, no-meat loaf, and no-meat balls
Soft to Silken Tofu: desserts, dips, sauces, egg replacement, and baking
Personally I LOVE stir fry!. Cubed Extra Firm Tofu marinated in tamari soy sauce, chopped ginger and garlic for 30-45 minutes!. Drain the marinade off and set aside for the veggies!. Fry the tofu cubes in a 1-2 tbsp!. canola oil with until browned!. Set aside tofu and cook your veggies in the marinade!. When the veggies are tender crisp throw the tofu into the pan and heat through!. Serve with rice and top with a little chopped ginger or sesame seeds!.Www@FoodAQ@Com
