What is the basic herb /spice combination for a chilli and what veg or bean combo would you recommend!?Www@FoodAQ@Com


Answers:
Basic spices in chili are of course chili, a bit of oregano, masa (which is corn flour), cumin, and paprika!. Some people do add jalapeno and red or white pepper to spice!.

I would try a basic 4 parts cumin to 4 parts masa, 1/2 part oregano, 1 part chili powder, and 1/2 part paprika!. This is a good ratio to work out and adapt to any measurement (cups, tablespoons, etc!.)!. Stir into tomato sauce/chunks, whatever you prefer!. Add in chopped onions and perhaps garlic as well, or powders if you must (but fresh is always better)!. Bell peppers also add some extra colorand flavor!. If you feel like you should, taste after you have stirred in ingredients and see if youd like to add more paprika, chili powder, or red/white pepper for spice, masa for cooling, or cumin for the base of the chili taste!.

As for beans, there should be very little space with just sauce in your chilli, and I recommend a combination of black, pinto, and kidney beans!. That is what I always add to my chilli!. I also recommend tofu ground-beef style, which can now be found in many supermarkets to add a little extra authentic texture!.Www@FoodAQ@Com

Super easy and more importantly, super cheap, makes a lot so you can have left-overs for lunch too:

Ingredients:
2 cans kidney beans, drained
1 can lima beans, drained
2 cans diced tomatoes
1 can sliced olives, drained
1 can corn, drained
4 cloves garlic, minced
1 diced onion
2 tablespoons chili powder
(I also add a few dashes of cayenne pepper, I like it spicy)

Saute garlic and onion in olive oil until onion is almost caramelized!.
Add rest of ingredients and simmer for 15 minutes!.!.!.yum!

**Or!.!.!.just find your favorite chili recipe and substitute Boca crumbles for the ground beef!.!.!.they're good, really, if you haven't tried them, I use Boca crumbles for sloppy Joe's!.!.!.and my non-vegetarian hubby will even eat them!Www@FoodAQ@Com

Soak my pinto beans the night before!. I guesstamate on the amount of beans - it fills my one little colander that I wash them up in - no thought as how much it is or weighs!.

Drain and pour over water to cook the pintos - but not totally!. After they are almost cooked - I add a can of diced tomatoes and green chilies (mild or hot - your choice) along with a can of diced tomatoes!. If you want it to have more 'juice' - add more tomatoes or a can of the diced tomatoes and chilies - your choice!.

I toss in onion (I like CHUNKS, not diced), some browned LightLife Ground (or you can leave it out if you like), cilantro, garlic, and chili powder to taste!. You can add more fresh peppers if you want - it is up to individual tastes - I like more peppers and lots of cilantro!.

Cook till it is done!. Add water as needed while cooking!. Serve it up in a big bowl with some homemade cornbread - maybe some rice to pour the chili over - big glass of iced tea - and you got supper!.

Maybe a bowl of fresh chopped onions for those that like more onion than you put in - if you eat cheese (make the choice of vegetarian or not), some like to sprinkle that over the top of it!. I also like some fresh cilantro to put on the top - just because!. But that is about as easy as you can get - and it is fast, easy, and not expensive to make at all!.

Usually makes about 4 to 6 bowls - depending upon how hungry I am - and how big the bowl is that I am using - and I got some BIG BOWLS!.

Cornbread

I use an old Texas favorite corn meal, Pioneer!. I use the recipe off the back!.

1 cup yellow corn meal
1/2 cup flour
2 tsp baking powder
1/2 tsp salt
2/3 cup of unsweetened soy milk
egg replacement for one egg (your choice - I have Ener-G) - or if you eat eggs - 1 egg
3 Tbl!. veg!. oil
1 tsp!. sugar (optional)

Heat oven to 450!.
Oil your pan (I use an olive oil spray myself)
Mix all your dry ingredients in a bowl!. Add your milk and oil!. Add the egg replacement at the very end - as you have to put it in the pan quickly and in the oven after getting it mixed in!.

Bake about 20 to 25 minutes - or till it is done (depending on how hot your oven runs)!.

Spray a bit of oil on the pan your baking in!. I like to bake mine in a cast iron skillet!. Not only do you get a nice crust on the bottom, but it actually helps with keeping up your iron levels believe it or not (per my doctor)!.Www@FoodAQ@Com

This probably won't answer your question, but I will tell you how I make my chili!.!.!.

I take 1 large can of petite cut tomatoes!. I add 1 package of LightLife Ground and a can of Chili Magic!.

I make that for my family of 4!. I also make a chichi's corn bread packet by following the directions!.

Now this is the lazy way, but it turns out really good!. It has everything that chili calls for, only it can be ready in less than 15 minutes if you leave out the corn bread!. That takes like 45 minutes, so I just put that is early!.

however you like it! We generally use fresh chillies, maybe some dried/crushed chillies for an extra kick!. I like to throw in a bit of oregano, maybe some cumin, ground coriander!. Loads of fresh coriander - that's a must!.

Then lime, tinned tomatoes and a whole loads of beans and/or quorn mince!.

I must confess- I buy a jar of chilli sauce from Tesco or sainsburys- then add a tin of kidney beans and a packet of Quorn mince!. It takes minutes to make when you're in a rush and serve with rice for a quick yummy supper!.Www@FoodAQ@Com

I like to make mine with Kidney, garbanzo, black, and great northern beans, and maybe some chick peas!.

With a little bit of cumin, some taco seasoning, and some garlic!.
