It's hard to avoid wheat (but not impossible), and it's pretty good in bread, crackers, pasta, seitan, etc!.
Rice is okay, but actually, there are other grains that I prefer much more like quinoa!. To be honest I wouldn't care if I ever ate rice again, but then again I am of caucasian background!. I realize it would be much harder for someone of asian/pac!. islander heritage to give up rice!.
I hope I never become a celiac!. That would be awful!. :(
You say that anything made with wheat can be made with rice!. That's true but the rice products aren't as widely available and wheat has more fiber and protein than rice!.Www@FoodAQ@Com

I'd pick wheat mainly because six different types are grown all over the U!.S!. In comparison we don't have that many types of rice over here!.
The problems that California has had with the pesticides on it's rice paddies concern me just a bit!.
I can eat a little bit more wheat than I can rice due to wheat being just a little bit more fibrous and less fatty!. I can eat a 1/3 of a cup of wheat compared to a 1/4 cup of rice without worrying about becoming obese!.
I personally think that the U!.S!.'s soil is more suitable for wheat because rice has to be grown in a marshy area!.
Therefore to grow enough for every American to live off of exclusively you would have to convert more land to marsh which in turn would effect the integrity of the soil and the species in the area!.
All these considerations make me choose whole wheat!.Www@FoodAQ@Com
