There was a really interesting article about this in the Nov/Dec 2007 Issue of VegNews!. I'll paraphrase!.

It's within legal rights for manufacturers to list a gaggle of ingredients as "natural" flavors so long as they are derived from "nature" without undergoing excessive physical processing conditions during development!. However!.!.!. that includes some pretty creepy stuff!. Ingredients listed as "natural ingredients" may include the following:

- Castoreum: an extract from the ANAL MUSK glands of beavers
- Lipase: an enzyme extracted from calf toung, commonly found in dairy products like cheese
- Lanolin: a waxy fat extracted from sheep's wool, commonly found in chewing gum and products with added vitamin D3
- L-Cysteine Hydrochloride: a flour additive often extracted from duck feathers, commonly found in backing mixes
- Isinglass: a gelatin derived from fish bladders, used in the filtration process of many wines
- Carmine or Cochineal: GROUND UP CARCASSES OF BEETLES! commonly used to color processed foods, even orange juice (Tropicana!!)
- Pepsin: an enzyme from pig stomachs
- Rennet or Rennin: an enzyme from the stomach of slaughtered calves
- Gelatin: boiled hooves, bones, and skin

Keep in mind that "natural flavorings" doesn't necessarily mean it includes any of this stuff, it could just mean fruit extracts and juice concentrates!.!.!. but it seems to me that if the ingredients are legitimate, they'd have no reason to cover them up or use fancy names to hide them!. However, I don't think that blood is ever added under the label "natural flavorings!."

The definition of natural flavor under the Code of Federal Regulations is: “the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating or enzymolysis, which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional”

It seems that “natural” might not be so natural and that even some organic foods might contain some of these “natural flavors!.” There are still many grey areas for consumers and producers alike!. Research is being done and attempts are being made to produce more organic flavorings, but the process is slow!. We as consumers need to be more aware of what ingredients go into our foods and also take more initiative to encourage the government’s responsibility to regulate these ingredients and disclose the information to the public!.Www@FoodAQ@Com

not blood but roasted bones, marrow and usually cooked muscle, fats and linings!.!.!.!.!.
