This is a wonderful dish and would be great with a nice tossed salad and a fresh loaf of Italian bread! It's a fresh tomato sauce (not cooked) tossed with hot pasta!.!.it's one of my favorites!

Linguine with Fresh Tomato Sauce

2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish

In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour!.
In large pot, bring 5 quarts of salted water to a boil!. Add linguine and stir to prevent sticking!. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally!. Drain pasta well!. Serve with tomato sauce, and garnish with fresh parsley!.Www@FoodAQ@Com

shrimp spring rolls would be perfect, light, and healthy
ingredients: buy a pack of rice paper (in your local grocery store), red paprica, green bell peppers, olives, onions (purple ones), shrimps, crab meat (optional), cole slaw lettuce, carrots
sauce: peanut butter 2tbs, seseame seeds 1tbs, soy sauce 1tbs, mustard 1tbs, vinegar 2tbs, lemon zip 2tbs, sugar 2tbs, honey 2tbs!.
directions :
1!. boil the water and when it boils, put your shrimp in!.
wait for 5 minutes and take them out!.
cut them half each in the middle
2!.take a piece of rice paper and wet it just a little bit with a brush
3!. slice 2cm wide red paprica, green bell peppers, olives, onions (purple ones), crab meat (optional), cole slaw lettuce, carrots
4!. than put one of each veggies and put the shrimp on top
5!.close the rice paper and put pressure for couple of seconds so that it says round
6!.continue until you reach the amount you want!.
for the sauce, just mix all the ingrediants (peanut grinds will be good too for additional)
7!. dip the spring roll into the peanut sauce and enjoy!

You could make potato dumplings like gnocchi, you can make them out of mashed potatoes, here is a good fast recipe:

Combine the gnocchi with gorgonzola cheese (or in my case I use vegan cheese instead) and fresh spinach in a pan!. Let the spinach wilt down - you can easily fit a whole bag of spinach in there because it cooks down a lot!. Sprinkle in some walnuts and serve!. Very easy but it looks and tastes fantastic!.

Pasta is a quick and wonderful meal!. Get some pasta and sauce!. You could get a great pasta sauce from the store, or make your own with tomatoes, onions, garlic, mushrooms, herbs and spices!. You could even try home-made lasagna - just layer lasagna noodles with cheese, sauce and veggies!.

Maybe make veggie shish-ka-bobs!. Just take long skewers and put mushrooms, chunks of bell pepper, zucchini and onion, and little tomatoes on them!. Serve with dips like cheese dip, onion dip, BBQ sauce dip!. And a nice salad of your choice!.

You can do a breakfast-for-dinner thing, with French Toast, stacks of pancakes with jams and syrups, Belgian waffles, whatever you like!. It's kind of fun to switch things around sometimes!.Www@FoodAQ@Com

Nut Burgers (Vegetarian)


DIRECTIONS

1!. Place walnuts and sunflower seeds in a dry skillet over medium heat!. Cook, stirring occasionally until lightly toasted and fragrant, about 5 minutes!.
2!. In a medium bowl, mash garbanzo beans with a fork, or chop in a food processor!. Stir in the onion, egg, parsley, and toasted nuts!. Season with pepper and seasoning blend, and mix well!.
3!. Heat olive oil in a skillet over medium heat!. Divide the bean mixture into 2 patties, and fry in the hot oil for about 3 minutes on each side, or until well browned and heated through!. Place a slice of cheese over each patty, and remove from heat!.
4!. Place the pita round in the same dry skillet the nuts were in, and heat for about 1 minute on each side!. Cut the round in half, spread ranch dressing inside of each, and line the pockets with romaine leaves!. Place a cheesy patty into each one, and top with sliced tomato and avocado!.
