This vegan pancake recipe is so good; I've made it for meat-eaters and they loved it!.

Vegan Pumpkin Pie Pancakes

1 ? cups unbleached all-purpose flour
3 Tablespoons sugar
1 Tablespoon baking powder
? teaspoon salt
? teaspoon pumpkin pie spice
1 ? cups soy milk
1/3 cup canned pumpkin
1 Tablespoon corn oil (or vegetable oil)

1!. In a large bowl, combine the flour, sugar, baking powder, salt, and pumpkin pie spice and set aside!.

2!. In a food processor or blender, combine the soy milk, canned pumpkin, and corn oil and process until well blended!. Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined!.

3!. Use a skillet to make pancakes as you would with regular pancake batter!.

This isn't my recipe, but it sounds REALLY good!

Vegan Whole Wheat Banana Flax Waffles (Makes 16 waffles)

Ingredients:
1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/4 cup flax seed
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
3 cups soymilk
1 large banana, mashed (about 1 cup)
1/4 cup canola oil
2 teaspoons vanilla extract

Directions:
1!.) In a large bowl, mix together the dry ingredients!. In a large measuring cup, mix the wet ingredients!. Pour the wet into the dry and blend using a hand mixer on a low setting until you get a smooth batter!.
2!.) Heat a waffle iron and spray with oil!. Pour in the batter and cook until it stops steaming and the waffles are browned!.

DIRECTIONS
