If you're not much of a cook, how about pasta!? It's usually simple, filling, and I'm sure your mom will appreciate the effort!. Amy's Kitchen makes some great pasta sauces, all of which are vegetarian, and all you have to do is heat up the sauce and pour it on the pasta!. You can also cut some veggies up and toss them in the sauce!. Tofurkey makes some vegan sausages that are pretty tasty, and you could pan-fry or grill those and serve with the pasta!. Make a simple side salad, and you've got yourselves a yummy meal!.
www!.vegweb!.com also has some simple recipes, but if you haven't cooked with tofu or tempeh before, you might not want to try it out on your mom!.
As for cooking your chicken skewers on a George Foreman, I don't think that would work because of the skewers themselves!. If you have your own grill pan, that might work!. But why don't you eat the same meal as your mom and then have something nonveg when you get back home!?Www@FoodAQ@Com
