Any kind of veggie curry or chili con carne (obviously without the meat but with different kinds of beans) is pretty simple!. Get a jar or two of curry paste and some chili and do some experiments!. Have made some excellent grub that way because I used to have a vegan girlfriend!.

Best thing is you can make loads, portion it and freeze it and then microwave it when you want some!.Www@FoodAQ@Com

Vegan quesadilla!

need:
-flour tortilla
-vegan cheese (the brand Follow your Heart has the best vegan cheese in my opinion!)

chop the cheese into small pieces and put them on the tortilla, either fold it in half, or put another slice ontop!. You can either put it in the microwave for about a minute, or cook it in a pan over the stove!

YUMMY!
