Question: I have sweet poatoes, yellow squash and onions - recipe please!!?
I know it's not much to work with but I wanted to make some sort of casserole or crock pot recipe using these veggies!. I do have veggie stock and various seasonings as well!. Any ideas!?Www@FoodAQ@Com

Soup - via the crock pot!

Peel the sweet potato and carefully cut it into chunks!. Cut the yellow squash in half!. Roast the squash in the oven for 45minutes - 1 hour(until soft enough to scoop from the skin)!. Dice the onion!. Put 4 - 6 cups of veggie stock in your crock pot!. Add the sweet potato, roasted squash, and onion!. If you have cauliflower, add this too - makes your soup nice and creamy! Add the seasonings to your taste (garlic salt, black pepper, turmeric, sage, cumin, etc)!. Cook it all up in your crock pot until the sweet potatoes are tender (about 8 hours on low or 4 hours on high)!. Remove the lid and let everything cool down a bit so it's safe to blend!. Blend it in small batches!. Add some milk while blending if you want a creamier soup!. Enjoy!Www@FoodAQ@Com

Vegetarian BLack Bean Chili!.!.!.!.very yummy!!

INGREDIENTS
1/2 cup applesauce
1 tablespoon brown sugar
1 tablespoon ground coriander
1 teaspoon ground cayenne pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cloves
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
1/4 teaspoon dried thyme
1 pinch asafoetida powder (optional)
1 (15 ounce) can black beans
1 (6 ounce) can tomato paste
2 cloves garlic, minced
1 onion, chopped
1 yellow squash, chopped
2 carrots, chopped
1 sweet potato, peeled and diced
1 cup chopped fresh mushrooms
1 quart water, or as needed


DIRECTIONS
In a large pot over medium-low heat, mix the applesauce, brown sugar, coriander, cayenne pepper, cumin, oregano, cloves, rosemary, sage, thyme and asafoetida powder!. Cook just until heated through!. Stir in black beans and tomato paste!. Mix in garlic, onion, squash, carrots, sweet potato and mushrooms!. Pour in enough water to cover!. Bring to a boil, reduce heat to low and simmer 45 minutes, stirring occasionally!.Www@FoodAQ@Com

I kind of agree with someone else about roasting them, but it can still be a main vegetarian dish!. It doesn't have to be a side dish!. I roast some veggies that way with herbs!.

I start out by peeling and cutting the potatoes in chunks!. Cut up the squash the same way, and I would cut the onions in fairly large slices or pieces!. Put a small amount of olive oil in a bowl, add the veggies!. Now pick out your herbs and spices!. I sometime use a mixture I get from Trader Joes!. But I also use chopped rosemary (wonderful flavor), tarragon, basil, parsley, ground pepper!. You can use all of those or a combination, or just one with the pepper!.!.!.!. up to you!. I've also used oregano and basil together for an Italian flare!. Toss the mixture well, then spread out on a baking pan!. I would not use a very high oven!. I would use the standard 350 deg!. F!. (175 C) oven!. Sweet potatoes cook quickly, but all should brown nicely about the same time!.

I've cooked quartered fresh brussel sprouts with sweet potatoes in this manner as well!. I was a brussel sprouts hater until I discovered roasting them!. You can turn the oven up a little to 375 deg!. F!. The brussel sprout leaf pieces start to blacken and get crispy, adding a wonder difference of flavor and texture to the dish!.!.!.!. not burned!. This combination is one of my favorite veggie dishes!.

Depending on your seasonings, a nice touch to the completion of these veggies dishes is to sprinkle some freshly grated parmesan or romano cheese over the top just before serving!.

I would put the sweet potatoes in a dish and candy them !.Put in a butter and brown sugar and bake until tender!. I would take a recipe for au gratin potatoes and substitute the potato with onion and now you have almost a complete meal!. Add a salad and a main dish and you are eating well ! I know you wanted a dish for all three ingredients but i love candy yams and sweet potatoes so much it made me want some now!.Www@FoodAQ@Com

alright put these veggies and apples and carrots if you have them (but you don't need them) put them in a bit of water (or apple juice if you don't have apples and you have this lol) to stew them until they are a little soft and than take an emersion blender and or emlusion (idk the stick thingy with the spinny blade on the end!?) and puree them together!.!.!. reaaaally tastey!.!.!. also awesome if you roast them first :):)Www@FoodAQ@Com

I know you said casserole or crock pot, but I would bake them and seasonings and spices and serve them as a veggie side!.

Cut them up all in the same size, drizzle olive oil, salt, pepper, onion & garlic powder and bake at 425 degress until golden brown!.Www@FoodAQ@Com

slice all3 very thin or cut in chunks!.little pepper and little b rown sugar !.mix with hands in bowl,add some raw (not boiled)eggs,mix again,little olive oil in glass pan and bake at 350 for about 35 min!.Www@FoodAQ@Com
