When I have to make quick, easy, "on the go" kinds of things, I make wrap sandwiches!. You can put almost anything inside of a tortilla or lavash and it tastes good, plus you can throw it together in a flash!
Sometimes I just spread some hummus on the wrap, fill it with whatever veggies I have around (lettuce, shredded carrots, cucumbers, cherry tomatoes, sprouts) and wrap it up!. I still eat dairy, so sometimes I throw in some feta cheese, too!. It's simple but satisfying!.
I also like to make a Greek style salad (romaine, cucumber, tomatoes, red onion, kalamata olives, pepperoncini, chickpeas, feta, very lightly dressed with olive oil and lemon) and wrap it in the tortilla or lavash, which is pretty good!. Just make sure to not use too much dressing or it gets soggy!.
If you like falafel, that is always good in a wrap, and actually doesn't taste bad when it's cold or room temperature!. I'll spread hummus & tahini sauce on the wrap, and put in the falafel, veggies and some pickles!.
Hope that's helpful!Www@FoodAQ@Com

My wife's a vegetarian and I started cooking cuz she really didn't eat too well!. Lately, I've been making big pots of soup cuz they last for a while and are easy to warm up!. I soak beans (one bag) overnight (I do pea soup and lentil!.!.!. I like lentil better)!.
In a big pot!.!.!.!.
I dice garlic and simmer it in a little olive oil!. Add chopped onions (1), celery(5-6), carrots(4-5), and tablespoon of salt and let that saute on medium heat, stirring occasionally!. When the veg's are soft, I take the rinsed beans I had soaked and pour them in and just cover with water!. I add plenty of pepper and thyme!. Cover and turn to high until boiling!. Then set to simmer for an hour or until beans fall apart!. Last, I take two handfuls of elbow pasta (like macaroni) and toss it in!. When the pasta is cooked its done!. Eat with crackers or bread and after it cools, the rest goes into a Tupperware in the fridge!.
The whole batch costs like $3 or something ridiculous and lasts for days when we're in a hurry or don't feel like cooking!.Www@FoodAQ@Com

If zuchini (or are they called courgettes in USA!?) are in season yet, this is pretty quick, healthy & easy!. I don't know what it is called, my great grandfather apparently just did it one day & it's been quite popular since!
The amount you need varies on how hungry you are and how big your frypan is!
You need
1-2 Zuchinni's (Called Courgettes in USA!?)
2-3 Tomatoes
1 Red Onion
1-2 Potatoes
Enough grated cheese to cover (around 100-150grams)
Slice 1-2 zuchinni's up, either enough to feed you or enough to cover the bottom of a fry pan!. If that's too much, try using a medium sized pot!.
Do the same with the tomatoes!. You need good quality, ripe & sweet tomatoes for it to taste good!.
Peel & Slice the red onion, then layer on top!.
Peel & Slice the potatoes, yet again make another layer!.
Spread the grated cheese on top!.
Start on a low heat (with a lid, if possible) until you see the tomatoes and zuchinni surrounded in juice!. You can then turn it up to med-high!. The dish is completely finished when the potatoes are soft & cooked on top!.Www@FoodAQ@Com
