Hi, sometimes it does seem like its alot of cooking! When I make things like bean chilli, lasagna, no shepherds pie, casseroles which are the main meal recipes, I always make enough to freeze, and because they are made from fresh, they freeze well!. So I usually try and have a cooking morning!.
also decide what recipes you are going to cook for the week and write a list of ingredients you are going to need!.
Breakfasts are easy, cereals, toast, fruit, yogurts!.
Make some wraps/sandwiches/pitta breads for your lunch, make them the night before if you are pushed for time in the morning!.
also I make a bean salad, which will keep in the fridge, covered!. also things like coleslaw and potato salad are easy to make and keep in the fridge!.
If you make a cold pasta dish, this also keeps well and you could also use that for your lunchbox!.
It does take a while to get used to it, don't worry about it, if you go vegan gradually it may be easier for you! :)Www@FoodAQ@Com

I usually spend about an hour or so cooking dinner in the evening!. For the most part, my lunches for work are leftovers!. You can save time by making more than you need and freezing leftovers!. When I make black bean burgers, for example, I make a batch of eight and eat one (OK, sometimes two!) - the rest go in the freezer for quick meals!. I keep breakfast simple on the weekdays (oatmeal and fruit, usually!.) Planning out meals to minimize time spent cooking is just something you need to practice!.Www@FoodAQ@Com

figure out what you are going to cook, plan time to cook it, and eat left overs!

im a vegetarian, but is close, but i can still cook eggs for breakfast ( like 5 minutes to cook!) and cereal with milk (a minute to get, pour, and start eating!) so somethings i guess are easier, just think ahead and plan!.

i shop at trader joe's, they have some vegan stuff that can be cooked in like 90seconds to 20 minutes, from rice, pizzas, and stir fry!

veggie fried rice FTW!Www@FoodAQ@Com

Unfortunately, alot of vegetarian ready-made dishes, like amys are expensive and so are most products at health food stores!. Stick to what you know when you start - not everything you eat has meat in it!. Soups are easy and fresh fruit and vegetables are ready to eat, as is!. Start with that stuff!. I wish i had some recipes for you but im vegetarian, not vegan!. At any rate, good luck kid!. One more vegan!. Hell yeah!.Www@FoodAQ@Com

Aye, I don't cook all my meals!. Most of them I eat raw, such as veggies and fruits!. The ones I do cook, are very simple, i!.e!. making a stir fry or boiling some water and cooking a whole grain like quinoa or making grits!.

So basically I only use the top of the stove or my toaster to "cook" anything!.Www@FoodAQ@Com

You don't have to cook everything,
Eat lots of fresh fruits and vegetables!.
Make big salads or veggie wraps!.
Drink soy milk or have it on cereal!.
