2 slices sprouted multi-grain bread
1/4 cup cooked sweet potato, mashed
2-3 tablespoons hummus
1/4 cup carrot, chopped
1 stalk celery, chopped
2 tablespoons salsa
5 green grapes, diced
1 teaspoon yellow mustard (optional)
Directions
1Spread sweet potato on one slice of bread!.
2Top with celery, carrot, grapes, and salsa!.
3Spread the hummus and mustard on the second slice of bread, and place on top of the first slice!.
4Enjoy!

OPEN-FACED CARROT SALAD SANDWICH

1/2 small banana, peeled
1 cup shredded carrots
2 tsp lemon juice
1/4 tsp grated lemon zest
2 Bibb or butter lettuce leaves
1 slice whole-grain pumpernickel bread
2 thin unpeeled apple slices

Mash the banana in a small bowl!. Add the carrots, lemon juice and
lemon zest, and stir to combine!.
Place the lettuce on the bread, top with the carrot salad
and apple slices!.

Tomato and Basil Sandwich

1 hunk of whole grain baguette(4 oz!?)
1-2 vine ripened beefsteak tomatoes(from my garden:)
1-2 basil leaves torn
1-2 thinly sliced red onion
a splash of balsamic vinegar or favorite ff italian dressing!.

Thickly slice your tomatoes!.
Simply assemble and splash on your dressing!. Enjoy!

Note: to brown bag this, place the sliced tomatoes, onion, basil, and dressing
in a container!. Assemble when ready to eat!.

You could add a little ff cheese, but we never do!.

If you have roasted garlic on hand, it's a superb addition! Just smash some
of those cloves into the bread first then assemble!.

Open-Faced California Club Sandwich

Ingredients:

4 slices toasted whole-grain bread
1 ripe avocado
1/2 tomato
1 bunch of lettuce or spinach
Goddess salad dressing, or other creamy vegan dressing
sprouts, optional
Directions:
Place two pieces of the toasted bread on each plate!.

Slice open the avocado, and use a fork to scoop out the avocado and mash it onto each piece of toast!.

Add lettuce or spinach (and sprouts, if desired) on top of the avocado!.

Slice the tomato and place two slices on top of the avocado and lettuce/spinach/sprouts on each piece of toast!.

Drizzle the salad dressing on top of each piece of toast!.

Comments:
Eat the open-faced sandwich with a fork and "steak" knife!. (Cut the sandwich into bite-sized pieces for kids who can't handle their own knife and fork!.)

Ingredients list above serves two people, with one open-faced sandwich per person!.

Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs!.

Amy's Indian food or Trader Joe's Indian Food (Dal) with rice!.

Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad!.

Hummus, pita bread and a salad!.

Gardenburger Breakfast Bacon - make a BLT add avacado!.

Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar!. Leave out to room temp until cheese is 'melted' looking!.

Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water!. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce!. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard!. Top with sesame seeds!. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard!.

Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad!.

Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce!. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down!.

Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce!. Serve with salad!.

MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese!.

Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can!. Cut up celery add to the pot, add a little rice dream milk!.

To vegetarian refried beans add mild green sauce!. Add soy cheese if desired!. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes!. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top!.

Quorn turkey roast, with mashed potatoes and a vegetable!. Use leftovers on for a 'turkey' sandwich or in soup -
Vegetarian Chicken Noodle Soup

6 cups of pure water
? cup Vegetarian Chicken Soup Base
6 organic celery stalks, chopped
1 ? cups sweet onion
6 carrots, chopped finely
1 package organic noodles (rice, corn or barley)
1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up)

Sauté Tenders lightly in olive oil!. Heat water, add soup base, stirring gently!. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders!.

Basil, Tomato and Mozzarella Sandwich
INGREDIENTS
1 (1 pound) loaf Italian bread
6 fresh basil leaves, chopped
2 tomatoes, sliced
4 ounces fresh mozzarella cheese, sliced (Soya Kaas)
1/8 teaspoon red pepper flakes
1/2 cup balsamic vinegar

DIRECTIONS
Slice the loaf of bread in half lengthwise!. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread!. Cut into four sandwiches!.
In a small dish, stir together the balsamic vinegar and red pepper flakes!. Use as a dipping sauce!.Www@FoodAQ@Com

APPLE BURGERS

2 tart apples, grated
1 c onion, minced
2 c bread crumbs
1 green pepper, seeded and chopped
1 T fresh ginger, minced
2 c brown or white rice, cooked (leftover is fine)
6 T rolled oats, ground
? t salt
black pepper
1-2 T vegetable oil

Directions Squeeze some of the juice out of the apples, then place in bowl with onions, bread crumbs, green pepper, ginger, rice, 3 T oats, salt, and pepper!. Mix well!.
Heat the oil in the frying pan, over medium heat!.

Shape mixture into four patties, adding more bread crumbs if necessary!. Coat with remaining 3 T of oats!.

Fry in 1 T oil over medium heat until golden brown, 2-3 minutes per side!.




BANANA TREAT

2 ripe bananas
? c walnuts, chopped

Directions Peel and chopped bananas, wrap in plastic, and freeze for several hours!.
Unwrap and process in juicer or blender!. Stir in walnuts and serve!.

Notes For a thinner consistency, add some orange or pineapple juice!.




There's nothing like a bowl of fresh, sweet fruit salad in the summer!. No one really needs a recipe for fruit salad, but here are some ideas to get you started!.

Remove the seeds from watermelons, citrus fruits, etc!. - fruit salad is a lot more pleasant when you don't have to spit seeds out after every bite!. Using seedless grapes will save some work!.
Soft fruits like bananas should be laid on top; mixing them in might cause them to become mushy!.
A sprinkling of lemon juice will keep fruits from turning brown!.
Don't use too much pineapple, as tongues often start hurting after eating too much!.Www@FoodAQ@Com

The easiest thing for a packed lunch is a hummus and pita sandwich!. (Add lettuce and tomato, and maybe red onion, if you like)!.

For dinner, quick and easy things are stir-frys (use a bag of frozen mixed stir-fry vegetables if you don't want to cut your own) and add tofu, tempeh, or seitan!. Serve over rice (use quick rice if you're in a hurry) with soy sauce!.

My favorite meal is rice and beans (any kind: black, pinto, lentils, kidney, mung, mayacoba!.!.!.) Beans are easy to prepare but take a while!. Set the beans out in a bowl of water overnight, then fry some onions and green peppers in a pan and then add beans, vegetable bouillon, water, and some seasonings you like (for black beans, try cumin, coriander, and cayenne)!. Let this simmer til the extra liquid has evaporated!. This will take a few hours but you can eat it for a week and a half (if you're only cooking for yourself)!.

If you like things hot go for a thai green curry!. Some thai green curry paste heated in oil, a chopped onion, coconut cream, fish sauce, teaspoon of sugar, then add chopped aubergine (eggplant), sweet potato, string beans and cauliflower!. Simmer on low for half an hour or so!. Serve with some Basmati rice!. Can't go past it:-) Only really takes a short time to prep coz all you need to do is chop a plate of veg!. Very easy for wicked results!.

If you have leftovers they will reheat well in the microwave for lunch, but chances are there'll be no leftovers!Www@FoodAQ@Com
