Fresh herbs...looking for ideas?!
Hey all!
I'm looking for some [vegan] menu ideas that involve fresh herbs (like cilantro, parsely, basil, etc!.)!. I'm tired of using the far-from-fresh stuff I have in the bottle!.
I'm wondering which herbs pair well with which type of fare (i!.e!. Italian, Asian, Indian, etc!.)!. What herbs are your favorites and in which dishes!?
I would rather not have a bunch of recipe links for answers, as I don't really use recipes much!. I cook from my soul (so to speak) and rarely follow scripted foods!.

Here are my herbs that I use for certain dishes!
For French food: Chervil, Sorrel, Marseille Basil, Parsley, Sage, Savory and Chives
For Asian food: Mitsuba , Red Shiso, Green Shiso, Nira Chives, Cress and Shungiku (chrysanthemum)
For Texan/west-mex/ Food: cilantro, epazote, globe basil, oregano, thyme, and parsley!.
And for Italian: Basil, Garlic Chives, Mint, Savory, Italian Parsley, Oregano and Thyme!.
Note: Cool that your vegan im veg, and I don't think I could ever give up cheese!
I find planting my own herbs to be extremely beneficial and it ends up being the freshest of fresh (you also know its organic! ;)!.
If you wish to plant herbs and live in a cold climate, you might want to buy some indoor lighting system for the herbs ;)Www@FoodAQ@Com

I am a former chef and incorporate alot in my cooking to, I am a lacto-ovo vegetarian and find like with non veggie cooking they liven up food, I use them in salads, in soups, main dishes and in other hot and cold dishes!.
One thing about fresh herbs is they are best added at the end to keep there colour and freshness, herbs like rosemary, thyme and bay leaves are fine for long cooked items, but the more delicate ones like basil, chervil, cilantro and either type of parsley are best added at the end to keep the flavour!. I used them in dishes like Tabouleh, dips and sauce for cold dishes, mint and cilantro are particularly good in cold sauces for samosas, pakora and other veggie delights!.
Any veggie dish can be improved with a dash of fresh herbs, and unlike dried they tend to be lighter than the others so they need a bit more and can be used in many dishes in the veggie culinary cuisine cookbook!.Www@FoodAQ@Com

Basil fresh in a tomato and grilled cheese bake!.
oregano and thyme are great tossed in olive oil and warm potato's!. sprinkled with chives!. Mmmmm!.
Lentils-curry powder, honey, cumin, lots of cilantro really Delicious!.
parsley lightly Fred with garlic and onion is great or added to a soup!.
