Courgettes/Zucchini?!


Question: Courgettes/Zucchini!?
Has anyone any interesting variations on how to cook courgettes!? I usually just season them and griddle them as a side dish to dinner!. As my whole family love them I'd like to keep them interested with a few new ways of cooking them!.
also, can everyone please keep everything crossed for Munster in Cardiff on Saturday!?!?!?!? (My future happiness for the rest of the year depends on it)Www@FoodAQ@Com

Halve them, core them out a little and stuff them with anything from cheese, to other veges to whatever you'd like, then bake them!.

Pasta with courgettes and herbed cream cheese


Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
400g/14oz pasta
4 courgettes, diced
1 lemon, half thinly sliced and juice of the other half
2 shallots, finely chopped
2 cloves garlic, crushed
l red chilli, finely chopped
6tbsp/90ml/3fl oz cream cheese, whipped until smooth
10g/?oz parsley, roughly chopped
salt and pepper
olive oil

To Serve:
parmesan
handful torn basil leaves




Method
1!. Cook the pasta according to instructions on the packet!.
2!. Saute the shallot, garlic and chilli in olive oil and add the lemon slices!.
3!. Add the diced courgettes, and a little more oil if necessary, and fry until golden brown!.
4!. Add the chopped parsley, cream cheese and lemon juice!. Stir until the cheese has melted into the mixture to make a sauce!. Season with salt and pepper!.
5!. Toss with the pasta and serve!.

This is one that i cook either as a side dish or double/treble the quantity and serve with rice or pasta!.

1 or 2 cloves of garlic, depending how much you like it! :)
1 large red bell pepper, thinly sliced!.
1` large orange bell pepper thinly sliced
cherry tomatoes about 350g
2/3 large Courgettes
and sunflower oil for frying!.

Heat oil, add crushed garlic, fry for a couple of minutes(medium heat) then add courgettes, peppers and cook until soft, then add cherry tomatoes, and turn up the heat for about 5 minutes, stirring the ingredients!. then serve!Www@FoodAQ@Com

Thinly sliced courgettes simply sauteed in butter, to which you add crushed garlic and a pinch of salt and ground black pepper!.
My recipe, goes with loads of dishes - Sliced courgettes, a tin of tomatoes, chopped, and/or some fresh chopped tomatoes, crushed garlic, salt, pepper and a good dose of dried basil!. Cook until all well blended together and tender!. Delicious with roasts, lamb, pork chops, roast pork, you name it!. If you like it even richer, then add a small tin of tomato concentrate to it!. Can be used on pasta also or eaten cold with couscous!.Www@FoodAQ@Com

Or I toss slices of them along with yello squash, sometimes broccoli and mushrooms too and cook up in some heated olive oil and garlic!.Www@FoodAQ@Com

courgette omlette - just griddle the courgette as you normally would and then add your omlette mixture an good as your usally would and serve with salad or chipsWww@FoodAQ@Com

i like 2 slice courgette lengthways, scoop out insides!. mix some quorn mince with the mashed up insides and refill, cover with cheese and put in oven for 15 mins - yum :-)Www@FoodAQ@Com

Tempura batter them and fry them!. dip in horseradish sauce!.!.!.

Cut them in half and then wedges!. dredge in cornstarch and then dip in tempura or beer batter and deep fry!. be sure the oil is between 325-350!. Drain on paper towels!.!.!.I prefer brown paper as they don't stick to that!.
Horseradish sauce!.!.!.
1 C!. of sour cream
2 Tblsp!. of mayo!.!.!.good kind!.!.!.like helmans!. NOT miracle whip
Add horseradish depending on how hot you like it!.
a couple of dashes of garlic powder and some salt and pepper!. Mix and taste!.!.!.adjust to your liking!.

Or!.!.!.my kids LOVE this!.!.!.!.
Cut in thick slices or chunks and saute' in a mix of butter and olive oil with sliced onions, thyme, salt and pepper and a couple dashes of nutmeg!. When just about tender transfer to a casserole dish and sprinkle a generous amount of fresh grated romano or parmesan cheese!. Mix just a little and bake on 350 until cheese is lightly brown!.
It's really good in quiche with onion or shallots, bacon, swiss cheese!.Www@FoodAQ@Com
