Homemade Pizza - Boboli (or your favorite) shell + tomato sauce + veggies of choice (presteam for a couple of minutes first) + pizza cheese > 9 minutes in the oven - delish! Great for leftover vegs becasue you can put basically anything on it!.

Get some veggie meatballs (avail at most supermarkets) + provolone cheez + sauce and ya got meatball sammiches!

Boca makes good veggie italian sausage - sautee with onions, garlic, green peppers and italian seasoning for a killa sausage, onion and pepper sandwich (or a super topping for pasta!)

And speaking of Pasta - pasta's vegetarian! Gat a good sauce and if ya want to fancy it up a bit then steam some veggies like broccoli, squash, or whatever and toss it on top! Yum!

Hummus is flexible and delish - I ? Hummus & Pepperoncini sandwiches but that's me!. Get some fresh pita bread and warm it up before dipping!. Put some olives on the side and you're doing it classy!

Ole! Mexican is mucho vegetariano! And who doesn't like Nachos!? Spread your favorite corn chips on a cookie sheet and pre-heat your oven to 325!. sprinkle a LIGHT layer of shredded Mexican cheez then sprinkle pinto beans, olives, jalapeno slices, salsa (optional, and drain the water out so your nachos aren't soggy), and a sprinkling of hot sauce if you're sassy!. Then a thicker layer of cheese!. Throw in the oven for 8 minutes - you'll know they're done when the edges brown!. If you prefer refrieds over pinto beans, microwave the refrieds for a minute to soften them then "flick" dabs of them onto your nachos!. MMMMM!.

PEANUT BUTTER & JELLY SANDWICHES!

Like Indian Food!? I sure do! The ethnic aisle of your local supermarket will have a number of tasty vegetarian Indian dishes ready to heat in the microwave for ~2min!. Look for them in the flat boxes!. Cook some instant brown rice and it's like you're bringing the mysterious subcontinent into yer kitchen! Yetiwisdom ?'s Paneer Palak!

SMOOTHIES! 1/2 pineapple, 1/2pt Strawberries, 1 Banana, 1 cup o' yer favorite yogurt & ice into your favorite blender! Mix and enjoy! Add rum or vodka and enjoy more! Mix and match the berries! Reaspberries, Blueberries, Blackberries - go wild!

Of course, you should try all the Morningstar, Garden Burger and Boca offerings! There are tons of options there - my faves are the Boka Spicy Chik'n Patties, Morningstar Breakfast Links, Boca Sausages, Morningstar Corn Dogs !.!.!. I could go on and on!.!.!.

Be creative, have fun, and you'll dream up your own quick favorites!. I still hear people say being a Vegetarian is "too much trouble" and "where do I get my protein!?" What a bunch of nonsense! It's a blast and you'll feel better for it!

METHOD:

TIME: Prep/Total Time: 10 min!.

Ingredients:
2 cans (16 ounces each) chili beans, undrained
1 package (10-1/2 ounces) corn chips
2 cups (8 ounces) shredded cheddar cheese
4 cups chopped lettuce
2 small tomatoes, chopped
1 small onion, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1-1/4 cups salsa
1/2 cup sour cream
Directions:
In a saucepan or microwave-safe bowl, heat the beans!. Place corn chips on a large platter!. Top with beans, cheese, lettuce, tomatoes, onion, olives, salsa and sour cream!. Serve immediately!. Yield: 8 servings!.

Heat it on stove and serve with cornbread if you have time to make it!.

fry 1 package of smart dogs in vegan spread
microwave bushes vegetarian baked beans
serve the dogs with toppings on buns with the beans on the side!.

Prepare taco meat as directed only use veg ground
Use vegan sour cream instead of regular
add salsa, soy or rice cheese, and cut up vegetables

----------vegan pasta salad----------
boil any kind of pasta to aldente and drain
add Italian dressing and cut up vegetables
refrigerate over night and add more Italian dressing!.

---------vegan sloppy joes-----------
make manwich or your own fave brand of sloppy joes with 1 lb smart ground or another brand!.

Hi im a vegetarian, have been for about 15 years and I find it increasingly difficult to get enough protein from my meals!.
One of my favourite quick to prepare meals is spicy beans!.
1 cup of brown or white rice boiled!.
1 tin of cooked kidney beans!.
2-3 teaspoons of chilli paste!.
1 red onion!.
1 handful of mushrooms!.
While boiling the rice I slice and fry the onions and mushrooms in olive oil!.
Once cooked I add the chilli paste and fry for about 30 seconds!.
Add the kidney beans and maybe a little passata (liquidised tomatoes) and stir together!.
Add another teaspoon of chilli paste and simmer for 8-10 mins!.
Place rice on plate and scoop on the spicy beans!.
Add a few splashes of tobasco if you want to blow your head off!.
Lovely, low fat and hot as hell!. One of my faves!.

use 10 minute brown rice
but as for beans soak them over night and put them in a crock pot and cook them 8 -10 hours while away or cook them the night before and put in a pot in am and put on a hot plate and put a timer to come on 3 hours before ready to eat i do this every weekend when coming from church so the beans are ready or the vegetables can be done the same way on a seperate hot plate for 1 hour or less if you would like!.

Hummus is one of my favorites!. The simplest & best tasting recipe I've found so far is 1 can chick peas, 1/4 cup olive oil, 1 tbsp lemon juice, & 1 tsp cumin; you just mix all those together in a food processor & serve w/pita bread!. 2 ingredients, about 15 min!. potatoes and any kind of sauce or gravy!. i take hash brows from the freezer and fry them on a frying pan with olive oil for about 10min then i pour 2 tbspoons of kikkoman sweet and sour sauce and stir for about 4 min and done!. i also sometimes add boiled broccoli!. to this!. i also boil potatoes and use the same sauce on them and serve them with broccoli and peas!. or if i'm really busy i go to wholefoods and buy stuff to go!.Www@FoodAQ@Com

Can of condensed mushroom, tomato or celery soup
Mixed vegetables (frozen or fresh)
Pasta
Quorn cubes if desired (I don't bother)

Quorn 'Chicken'
Olive oil
Diced Onion
Clove garlic crushed
Celery- chopped
Red pepper - diced
Green pepper diced
Mushrooms - sliced
Fry all these ingredients together for 5 mins!.then add:-

4fl!.oz Boiling water + 1 veg stock cube
salt and pepper

ZUCCHINI PARMESAN
4 c!. thinly sliced zucchini
1 tbsp!. water
1 tsp!. salt
3 tbsp!. grated parmesan cheese
1 sm!. onion, chopped
2 tbsp!. margarine
Freshly ground pepper

Put all ingredients except cheese in skillet!. Cover and cook 1 minute!. Uncover and continue cooking and turning with wide spatula until just tender!. About 5 minutes!. Sprinkle with cheese!. Toss!. Serves 6 to 8!.

CRACKLY CORN
1 c!. sugar
1/4 c!. butter
1/2 c!. dark corn syrup
1/2 tsp!. vanilla
1/2 tsp!. salt

Pour over 8 cups popped popcorn!. Toss gently to coat corn!. Bake at 200 degrees for 1 hour!.

BAKED GARLIC CHEESE GRITS
1 c!. uncooked grits
4 c!. water
1 tbsp!. salt
1/2 c!. butter
1/2 lb!. sharp cheese, grated
2 tbsp!. Worcestershire sauce
2 or 2 shakes garlic powder

Cook grits in salted water; when done, add remaining ingredients!. Pour into greased casserole dish!. Bake in 350 degree oven for 20 minutes!.

CARROT SALAD
1 c!. boiled carrots, chopped fine
2 tbsp!. sweet pickles
1 c!. celery, cut fine
2 hard boiled eggs, chopped fine
1 c!. mayonnaise
1 sm!. onion (or several green onions)

Mix all ingredients together!. Serve on lettuce leaves with a dash of paprika sprinkled on top!.

BROCCOLI - PECAN SALAD


3 c!. broccoli
1 c!. pecans
1 c!. celery
Miracle Whip
1/2 c!. green onion
3 or 4 boiled eggs
1 c!. zucchini
Salt and pepper to taste

Cut all ingredients in small pieces; salt and pepper to taste, add Miracle Whip generously as salad dressing!.

SHOEPEG CORN SALAD
2 cans shoe peg corn, drained
1 green pepper, chopped fine
1 bunch green onions, chopped fine
1 jar pimento, drained and chopped
1/2 c!. ripe olives, sliced
1 c!. grated Cheddar cheese

Toss together with 8 oz!. low calorie or regular Italian dressing!. Serves 12 to 14!.Www@FoodAQ@Com

10 minutes isn't very realistic!.!.!.!.!. but here's a few:
Amy's Indian food or Trader Joe's Indian Food (Dal) with rice

Hummus, pita bread and a salad!.

Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce!. Serve with salad!.

Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can!. Cut up celery add to the pot, add a little rice dream milk!.

Basil, Tomato and Mozzarella Sandwich
INGREDIENTS
1 (1 pound) loaf Italian bread
6 fresh basil leaves, chopped
2 tomatoes, sliced
4 ounces fresh mozzarella cheese, sliced (Soya Kaas)
1/8 teaspoon red pepper flakes
1/2 cup balsamic vinegar

DIRECTIONS
Slice the loaf of bread in half lengthwise!. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread!. Cut into four sandwiches!.
In a small dish, stir together the balsamic vinegar and red pepper flakes!. Use as a dipping sauce!.

Here's more when you have more time:

Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs!.

Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad!.

Gardenburger Breakfast Bacon - make a BLT add avacado!.

Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar!. Leave out to room temp until cheese is 'melted' looking!.

Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water!. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce!. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard!. Top with sesame seeds!. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard!.

Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad!.

Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce!. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down!.

MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese!.

To vegetarian refried beans add mild green sauce!. Add soy cheese if desired!. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes!. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top!.

Quorn turkey roast, with mashed potatoes and a vegetable!. Use leftovers on for a 'turkey' sandwich or in soup -
Vegetarian Chicken Noodle Soup

6 cups of pure water
? cup Vegetarian Chicken Soup Base
6 organic celery stalks, chopped
1 ? cups sweet onion
6 carrots, chopped finely
1 package organic noodles (rice, corn or barley)
1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up)

Sauté Tenders lightly in olive oil!. Heat water, add soup base, stirring gently!. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn TendersWww@FoodAQ@Com

The obvious choice for a quick vegetarian meal is a salad since it takes no time at all to make!. But honestly, a GOOD satisfying meal is more than likely going to take more than 10 minutes (but there are plenty that can be done in 30 minutes or less)
