4 red or green peppers seeded & cut in half
2 cup cooked white rice WARM
1 cup shredded cheese (chedder or mozzerella) + more for top
1 can red kidney beans
1 small can del monte tomato sauce
1 teaspoon salt pepper oregano garlic powder
2 cloves garlic chopped
1/2 cup chopped onions
add all ingredients into warm rice
stuff pepper
top with more cheese

I enjoy peppers stuffed with a mixture of black beans, sauteed mushrooms and onions, quinoa, and tomato sauce!.
Prepare 3-4 peppers by slicing off the tops, cleaning out the pulp and seeds, and cooking them in a large pot of unsalted boiling water for 5 minutes!. Cook 1/2 c quinoa in 1/2 cup of vegetable broth and 1 cup of tomato sauce - bring it to a boil in a small sauce pan, lower the heat, and cover it for 20 minutes!. Meanwhile, chop and sautee 6-8 white mushrooms and 1/2 a medium onion!. When cooked, stir in 1 15-oz can of rinsed & drained black beans, the mushrooms and onions, and 2 tablespoons of maple syrup!. Stuff your peppers, and bake uncovered at 350 for 30 minutes!. Garnish them with fresh chopped cilantro, and you're done!

1 cup water
6 red or yellow bell peppers, wole
2 red or yellow bell peppers, diced
4-6 green onions (scallions), sliced
2 tbsp lemon juice
2 tbsp olive oil
1/4 cup fresh parsley, chopped
salt and pepper to taste
Preparation:
Bring the water to a boil in a saucepan and add the couscous!. Cover, and let sit for at least 20 minutes, or until couscous becomes fluffy when stirred with a fork!. Allow couscous to cool!.
Slice the stems and tops off of the whole peppers and remove the cores and seeds!.
In a large bowl, comine the diced bell peppers, zucchini, couscous and green onions!.
In a separate small bowl, whisk together the lemon juice, olive oil and parsley!. Pour this dressing over the couscous and gently toss to combine!.

Really this is a matter of taste!.
I would recommend selecting a starch that you like (Rice, Brown rice, quinoa, couscous, barley, etc!.
Add some beans (Black beans or Pinto would be good)
Then add some other vegetables which you think would go well, maybe corn (Trader Joes has a great roasted corn), or peas or really anything you like!. I also like to add some diced tomatoes, a finely diced jalapeno or 2 and some cheese, shredded cheddar is nice, then stuff them and add a little more cheese to the top!!

i stuff mine w/ saffron rice, black beans, peas, and cheese!. it's kind of like a vegetarian paella!. it's pretty popular at my house and really easy!. i would recommend adding a bit of vegetable broth to each pepper to keep it moist, though!.Www@FoodAQ@Com
