Answers:
Only water-soluble vitamins will be lost in the water!. Not any protein counts!. Water soluble vitamins are B-complex vitamins, Vitamin C and H!. In Lentils the only water-soluble vitamin is vitamin C, which has a marginal content in lentils!. Therefore in the water, there will be a slight amount of vitamin C, that should be it though!.Www@FoodAQ@Com

also the starch/sugar (whatever you choose to call it) also comes out to a certain degree!. This is what caused gas (flatulence) and why many kinds of legumes and beans need to be presoaked and drained a number of times before cooking!. Unless there's an easier method I'm unaware of!.Www@FoodAQ@Com
