i have basic food staples thats like it but i dont eat meat, so i need a veggie meal! and i dont have tofu or any thing like that, but i have a bunch of rice =]Www@FoodAQ@Com

Do you have or can you get the basic food staples of potato, oil, salt, pepper, butter!?

Even if you only have the potato, the beauty of this recipe is, it can be adapted to suit your needs!.

Jacket Potatos:

2 large potato, 8 -10 oz / 225-275 g!. Desirée potatos work particularly well but any kind can be used!.

A little oil (sunflower, olive, whatever)

Rock salt, crushed

A little butter

Salt and freshly milled black pepper

Pre-heat the oven to gas mark 5, 375°F (190°C)!.

(I normally do 200°C / Gas Mark 6 and I turn mine once after 1 hour)

First you need to wash the potato and dry them very thoroughly with a paper towel or cloth, then leave them aside to dry as much as possible!.

If you're using ready-washed potato you need not do this, as the high heat will purify them!.

Next, prick the skins a few times with a fork, then put a few drops of olive oil over each one and rub it all over the skin!.

After that, rub in some crushed salt – this will draw out the moisture from the skin and, together with the oil, provide more crunchiness!.

Now place the potato straight on to the centre shelf of the oven (no foil is needed but you can use it if you want to) and let them bake for 1? -2 hours, or until the skins are really crisp!.

When you are ready to serve, slit each potato in half lengthways and top with the butter and seasoning!.

Serve immediately because, after you remove jacket potato from the oven, they lose their crispness very quickly, so don't let them hang around!.

The secret of perfect jacket potato like the one described above is not to hurry them – give them up to 2 hours to get the really crunchy skin,

Instead of butter I use avocado!.

Other toppings include lightly sautéed vegetables; I like brussel sprouts and mushrooms!. Or that poor student speciality topping of baked beans; I like baked beans and onion topped with grated cheese!.

As you can see, you can mix and match to your hearts desire!. Plus it is a really cheap, healthy and filling meal!.

The humble baked potato is so versatile!. You can adapt them to suit meat-eaters, vegetarians and vegans!.

If really pushed for time, you can do them in a microwave but they don't taste as nice that way and you won't get a crispy skin!.

To get the full flavour and health benefits, you really need to cook them in a proper oven or wrapped in foil on a campfire!.

If you really ONLY have rice – then steamed or boiled rice seasoned with a little butter, salt & pepper is quite nice!. If you have milk, you can turn it into a rice pudding for dessert too!.

If you have pasta some grilled veggies with a side of pasta (or rice) is good!. Try to make a sauce on your own for the pasta - tomato sauce with some sauteed onions and mushrooms with a little garlic is good or add whatever you like!.
Do you have canned beans on hand!? Try mixing them with the cooked rice and add some other veggies like corn to the mix!. You can make a quick sauce for the mixture to thicken it - beans and rice are a great complete source of amino acids for vegetarians!.Www@FoodAQ@Com

Do you have tortillas!? You could microwave a potato, mash it all up, and smear it on 1/2 or a tortilla, then fry it in a pan!. Serve with salsa!. You could also add rice inside the tortilla!.

Or you could make a rice and bean taco/burrito with your favorite veggies!. If you have regular beans, and want re-fried beans, all you have to do is put them in a Pan and crush them with for (or at least, that's what I do)!.

u have only rice !? what other veggies u have!?!.!.!.!.!.!.fry some garlic , dinger,some other spices u have and add veggies and fry them litely and add rice and water in correct proportions and close the lid !.!.!.dont forget to add little salt!.!.!.!.!.Www@FoodAQ@Com

Im a veg!. so I LUV mexican (bean&cheese burrito, quesadilla, nachos!.!.PLENTY of protein) Or some really good chinese food like fried rice - minus the meatWww@FoodAQ@Com
