What world cuisines have interesting dishes for vegetarians?!
I like flavorful stuff like kimchi, and tofu pad thai!.

kimchi is awesome!. i dont know if your just eating the cabbage kimchi but i loooove cucumber kimchi!. its also easy to make!.
2 large cucumbers cut into rounds
soak in salt water!. enough to cover all the cumcumber
drain after three hours leaving just a little salt water and dried crushed red pepper flakes and vinigar along with chopped scallions and onion if youd like soo good!.
what my mom will actually do with cabbage kimchi is add water and boil it and add sliced tofu to make kimchi soup and she will eat it over rice!.
as for other "world cuisines" try indian or mexican foods!.

from there you can add anything veggie wise really just make it into a paste and add into it !.
