if your having it on the side, have whatever veggie you like! not sure what you have available since you say you can't drive to get anything else, but how about corn, green beans, spinach, broccoli and cauliflower!? or mix up a few things!.!.!.!. i've found being veg i've discovered a lot of foods i like just buy randomly trying new things or mixing things i hadn't thought of!.
or just have a cold salad on the side- use spinach instead of lettuce if you can to make it even healthier!.Www@FoodAQ@Com

How about using the black beans to make patties (burger-type things)!? Just parboil them and throw them in a food processor (or use canned and skip this step) with some green onions, cayenne pepper and Italian seasoning (or use your favourite)!. Remove from the food processor and add instant oats to get a stiff enough consistency!. [Try to minimise the amount of liquid going in with the beans]
Shape and fry (or bake!.!.!. but frying is tastier)!. I usually use an ice-cream scoop to drop them and then flatten the tops with a fork!.Www@FoodAQ@Com
