Egg replacement if muffins/bread.?!


Question: Egg replacement if muffins/bread!.!?
i use this recipe to make muffins and bread, and i am now going vegan, what could i use to replace the eggs in it!. I have read about something called Ener-G was good as well as apple sauce or banana mashed up!.

any suggestions!?

1/2 teaspoon - baking powder
1/2 cup - macadamia nuts
1/2 cup - walnuts
1/2 cup - pecans
1/3 cup - golden raisins
3 large brown eggs
3/4 cup - vegtable oil
1/3 cup - pineapple
2 cup - shreeded CARROTS (i use the kind used for salads that they sell in the produce department)
1 1/2 teaspoon - cinnamon
3/4 cup - honey
1/2 cup - dark brown sugar
2 cup - all purpose flour
1 teaspoon - salt
1/2 teaspoon - ground ginger
1 1/2 teaspoon - baking soda
2 teaspoon - vanilla extract

I'm personally an Ener-G Egg Replacer girl!. However, in this recipe, I think applesauce as a replacer would be good (although it won't have the same "lifting" properties)!. With the Ener-G Egg, you take 1/2 tbsp of the replacer and 2 tbsp water per egg, mix well, then add to the batter!.

For honey, you do use agave nectar in equal proportion!. It's a bit thinner than honey, but just as sweet!. I think you can also use maple syrup, but make sure it's actually maple syrup, not the flavored stuff!. And brown rice syrup is also an option, but it isn't as sweet!.

For the three large eggs add about 3-4 tablespoons of canola oil!. And maybe a little water!. Eggs are just used for consistency, so if you can match the liquid content of egg with oil and water, then you're set!. :)

hmm with this recipe you could easily get away with using applesauce, id say about 1/4 of a cup!. or you can use half a banana, but that will leave the muffins with a banana flavour obviously!. these alteranatives are cheap and they work!! thats why i like them, even more than the actual box egg replacer!. but um yea these sound good!. :-)Www@FoodAQ@Com

sounds yummy ! both of your replacement ideas will work!. A box of the enerG will last a long time so if you like to bake it is a good investment at about $5!.00 for a box which equals 113 eggs!. the fruit purees will add more flavor than the egg replacer!. It is probably just a question of your taste and often when I'm cooking what is on hand and easier at the time!.Www@FoodAQ@Com

Egg Replacement Options

-1 egg = 1/4 cup soft tofu (the best!)
-1 egg = 2 Tbsp!. potato starch
- 1 egg = 1/4 cup mashed potatoes
- 1 egg = 1/4 cup canned pumpkin or squash
- 1 egg = 1/4 cup puréed prunes
- 1 egg = 2 Tbsp!. water + 1 Tbsp!. oil + 2 tsp!. baking powder
- 1 egg = 1 Tbsp!. ground flax seed simmered in 3 Tbsp!. water
- 1 egg white = 1 Tbsp!. plain agar powder dissolved in 1 Tbsp!. water, whipped, chilled, and whipped again


Tips

-If a recipe calls for three or more eggs, it is important to choose a replacer that will perform the same function (i!.e!., binding or leavening)!.

- Trying to replicate airy baked goods that call for a lot of eggs, such as angel food cake, can be very difficult!. Instead, look for a recipe with a similar taste but fewer eggs, which will be easier to replicate!.

- When adding tofu to a recipe as an egg replacer, be sure to purée it first to avoid chunks in the finished product!.

- Be sure to use plain tofu, not seasoned or baked, as a replacer!.

- Powdered egg replacers cannot be used to create egg recipes such as scrambles or omelets!. Tofu is the perfect substitute for eggs in these applications!.

- If you want a lighter texture and you’re using fruit purées as an egg substitute, add an extra 1/2 tsp!. baking powder!. Fruit purées tend to make the final product denser than the original recipe!.

- If you’re looking for an egg replacer that binds, try adding 2 to 3 Tbsp!. of any of the following for each egg: tomato paste, potato starch, arrowroot powder, whole wheat flour, mashed potatoes, mashed sweet potatoes, instant potato flakes, or 1/4 cup tofu puréed with 1 Tbsp!. flour!.Www@FoodAQ@Com
