Tofu is a truly versatile food and if you are looking for an alternative source of high quality protein -- look no further! Tofu was originally made in China more than 2,000 years ago and has long heen known as the "wonder food of the East"!. Made from the soya bean, it is richer in protein than any other food of equivalent weight!. It is low in fat, high in calcium and a good source of iron, phosphorus, potassium, essential B vitamins, choline and fat soluble vitamin E!.

Another added bonus is that tofu is cholesterol free, with calories averaging only 90kCal per 100g / 4oz!. You can now buy tofu in most supermarkets, wholefood and health food stores!. It comes in various forms; silken, firm, exfra firm, smoked and marinated and can be used in both savoury and sweet dishes!. The firm, smoked and marinated varieties are usually used for savoury dishes, curries, stir fries and burgers, while the various types of silken tofu are used in desserts, savoury dips, sauces and mayonnaise!. Certain types of tofu can be deep frozen, resulting in an interesting change of texture!. This makes it more 'spongy' so that it readily soaks up any flavourings you wish to add!.

Tofu Burgers
Makes 8 burgers
Once cooked, these tasty burgers freeze well!.


Ingredients:

1 block/285g/10?oz firm tofu
50g/2oz bulgar or 100g/4oz cooked millet or rice
2 fl oz/50ml hot water
1 small onion, very finely chopped
50g/2oz mushrooms, very finely chopped
50g/2oz carrot, grated
1 vegetable stock cube, crumbled
2 tbsp soya sauce
1 tsp dried mixed herbs or 2tsp any fresh herb, coriander, dill etc!.
2 tbsp wholewheat flour plus a little extra for coating!.

Method:

1 Break up the tofu with your fingers into very small pieces!.

2 Mix all the ingredients together in a bowl and squeeze well to shape into burgers!.
(As the mixture is very sticky it will help if you dip your hands and utensils in cold water)!.

3 Refrigerate for an hour or two!.

4 For a crisp coating, toss the burgers in a little wholewheat flour before frying!.

5 Deep fry the burgers in oil, a few at a time!.

6 Drain well and serve hot or cold!.

NOTE: it is most important to fry tne burgers in very hot oil to avoid disintegration!.

Tofu is a good source of protein and calcium!. It is good in salads, burritos, pilaf, wild rice with veggies, marinated in Italian Salad Dressing and cooked on the grill, and in sandwiches!. Tofu is made from soy bean, which is a complete protein!. It is the mainstay of protein for many cultures that do not eat meat, or where meat productoin is too expensive!.
