Easy vegetarian chili recipe?!
The only beans I have on hand are 1 can of black beans, 1 can of chickpeas, and 2 cans of white kidney beans!.Www@FoodAQ@Com

Here's the recipe I use!. It's easy and delicious (and happens to use exactly the beans you have on hand!.) I make it in the crockpot, but if you don't have one, you could adapt the cooking time to the stove!.
1 onion, diced
2 cloves garlic, minced
1 red or yellow bell pepper, chopped
2 carrots, sliced thinly
1 1/2 c corn (I just use frozen)
1 zucchini, diced
1 can kidney beans, rinsed
1 can black beans, rinsed
1 can chickpeas, rinsed
2 15oz cans diced tomatoes (I use the ones with jalapenos)
1 1/2 c water
1 1/2 Tsbp chili powder
1 tsp cumin
1/2 tsp red pepper flakes
dash cayenne pepper
dash tabasco
Chuck it all in the crock pot, stir and cook on low for 6-8 hours!.Www@FoodAQ@Com

When I make chili I just put a bunch of different kind of beans in, your selection sounds fine!. Then I also use a can or two of stewed or chopped tomatoes, and a can of tomato paste!. It really depends on the thickness you like your chili!.
If you like it spicy add in some chopped green chilis or chopped jalapenos!. also a package or two of chili seasoning and I usually add a little more cumin and chili powder to taste!. I throw everything in the crock pot and crank it up to high for a few hours!.Www@FoodAQ@Com

2 (10 1/2 oz!.) cans condensed vegetarian vegetable soup
1 soup can of water
1 (6 oz!.) can tomato paste
1 tbsp!. sugar
2 (16 oz!.) cans pinto beans, rinsed and drained
1 c!. shredded cheddar cheese
Cook pepper and onions with chili powder and oregano in butter until tender!. Add remaining ingredients except beans and cheese!. Bring to boil; reduce heat!. Add beans; heat!. Top with cheese just before serving!.Www@FoodAQ@Com

I usually go super-easy when I make chili!. I take a can of chili starter, a can of crushed tomatoes, and a can of kidney beans, throw it all together and cook for 10 minutes or so!. Sometimes I add in Morningstar Farms crumbles!.Www@FoodAQ@Com
Try this!.!.!. it's what I use, just cut out the fake meat and substitute whatever you have on hand!.!.!. that's the beautiful thing about chili; it can use almost anything!.
