I'm a vegetarian who's trying to lose some weight, too, and I've found that you can eat a lot of things for 500 calories per meal!.
One way would be to get those frozen meals from companies like Amy's or Mon Cuisine!. Those are rarely more than 400 calories unless it's a pasta dish!. Some are a bit high in sodium, but if you can find varieties that fill you up, they're easy to grab for lunch!.
Another thing that you can do measure, measure, measure your food! Look at the serving size on a package or can and actually follow it!. The easiest way is to get some 4-ounce containers!. I had a bunch of those cheap Gladware ones at home already!. The 4-ounce ones are half a cup!. Fill it up halfway for a 2-ounce serving (like for nuts), and fill up two for a cup (like for cereal)!. That should definitely help!.
And, no, plain old tofu isn't high in calories! It's bean curd, made from soybeans!. It's high in protein, and it's great if you can find the kind that's calcium-fortified!. Here's a site that will give you more nutrition info about tofu:Www@FoodAQ@Com

You can have all the lettuce that you can eat!.A large iceberg lettuce salad with vinegar dressing!.Www@FoodAQ@Com
You can eat piles of salad, fruit and cereals!. But remember you will have to ensure that you are getting a fully balanced diet or you will pay for it at a later date!. I think 500 calories a day is not enough for a person who leads anormal life-style!. You may dip tofu into a mixture of soy sauce {Japanese} and sweet chili sauce or mayonnaise!.Www@FoodAQ@Com
Tofu and soy sauce!. Yum, yum! Perfect for a summer lunch -- with sliced cukes, some ume-boshi on top, and maybe a little shredded shiso/perilla leaves!.
If you stick mostly to raw or steamed veggies, I'd think you'd have enough room for some bread, etc!. Aren't there vegetarian magazines that help deal with this!?
Good luck!.Www@FoodAQ@Com
