It is indeed a full moon tonight!.
Here's a raw recipe I got at a food demo at my local Whole Foods:
For the "pasta":
2 7-inch zucchini
1 small bell pepper
1/4 C fresh basil, chiffonade
For the sauce:
1/2 cup tahini (or any nut butter)
2 tsp ginger, finely grated
1/4 cup lime juice
1 tbsp sesame oil (raw, if you can get it)
2 tbsp tamari or nama shoyu
1/2 tsp chili flakes (to taste)
1 tbsp maple syrup
2 tbsp water
Garnish:
black sesame seeds
sliced green onion
Cut the zucchini in lengths just long enough to fit in the food processor tube horizontally!. Grate horizontally to create "noodle"-shaped pieces!. Core and slice the bell pepper in long strips to match the shape and thickness of the zucchini!. Cut the basil in chiffonade, meaning, you roll up several leaves and thinly slice across the width!. Mix all the veggies together!.
In a small bowl, combine all the dressing ingredients to make a thick sauce!. You want it thick enough to coat the noodles, but not too thick!.
Pour the sauce over the noodles, sprinkle with the garnish, and serve!.Www@FoodAQ@Com
