Answers:
This depends on the restaurant/company!. You could find out by looking it up or asking the restaurant/company directly!.
I think tofu would be awesome in place of shrimp!. Although, I never liked shrimp!. I have had chicken and broccoli with brown sauce before and enjoyed it!. I think tofu, instead of chicken or shrimp, would be great especially since tofu should take on the flavors!.Www@FoodAQ@Com

I'm not sure exactly what is in the "brown sauce" but Chinese cooking often uses non-vegetarian oyster/fish sauce!.
It’s used for dipping, marinating, stir-frying and seasoning various Asian dishes!. There are vege-"oyster" sauces available if you want to cook at home and most Chinese restaurants will have a options without oyster sauce, you just have to ask!.
Hope this helps :)Www@FoodAQ@Com
