I want to be a vegetarian but i dont know how to replace chicken and fish i dont eat red meat and pork?!
Answers:
What are you trying to replace the chicken and fish with!? Do you mean you want to make old favorites that included chicken/fish but you don't know what to use!? or that you want to know how to get a balanced diet without meat!?
There are many great recipes out there that are vegetarian!. Some of them resemble(in taste and looks) meat dishes, while others are very different!. I would suggest getting some cook books and looking online for vegetarian recipes!. Different books have different types of recipes, some have fancy vegetarian recipes, while others are simple, some(as I stated before) remind the diner of their old meat favorites!.
Some of my favorites recipe books are:
Veganomicon: The Ultimate Vegan Cookbook
by Isa Chandra Moskowitz, Terry Hope Romero, Isa Moskowitz, and Terry Romero
Vegan Planet: 400 Irresistible Recipes with Fantastic Flavors from Home and Around the World by Robin Robertson

I also found it helpful to take out books from the library and copy down the recipes I liked!. Some books I looked at had a lot of recipes I liked while others only had a handful(it that case it made more sense to not buy the book, but copy down the recipes I liked)Www@FoodAQ@Com

You don't really need to "replace" anything!. You just need to eat a balanced, varied diet that incorporates all of the vegetarian food groups!. There are lots of faux chicken products available, though, if you're looking to make the dishes you're used to!. Fake fish is also available, but much harder to find (Asian groceries might be a good place to start!.)
I would suggest picking up a couple of vegetarian cookbooks and just trying some new things!. It can be hard to get out of the mindset of building a meal around a piece of meat!. Like someone else suggested, ethnic cooking can be a good way of breaking that mindset!.
Vegans don't eat dairy or eggs because the animals that produce those foods are kept under cruel, inhumane conditions!. We simply don't believe that animals should suffer for our food!. Dairy production also directly supports the veal industry (male calves will never produce milk, so they are worthless to a dairy operation and are sold to the veal crates!.) Both dairy cows and laying hens are slaughtered for food when their production slows!.Www@FoodAQ@Com

Um!. You just stop eating them!.
I didn't really "replace" anything!. I just stopped using them!. In soups, I switched to veggie broth!. In chili, I used extra beans!. If I felt like something "meaty" I would use the fake meat!.
It's pretty easy!. See if you can do it for a week!. If you have to, just take two times as much of everything else and skip the entree!. It might get boring over the long term, but it's a good way for you to remember just how many foods there are that aren't made of animal flesh!.
Vegans don't eat any animal products!. They have different reasons, just like vegetarians, but they object to using animals for food!. (Milk and eggs are exploitations of animals just as meat is!.)
Good luck!Www@FoodAQ@Com

I would suggest gradually weaning yourself off the chicken and fish and onto tofu, tempeh, etc!. They can be cooked poorly, but I have found that if you marinate tofu in vinaigrette salad dressing or bbq sauce before you fry it it's quite delicious!.
As to your other question, vegans don't drink milk because it is an exploitation of the cow!. Though I do drink milk, having seen the conditions even in 'good' dairy's, I cant help but agree with them!.Www@FoodAQ@Com

I know of soy chicken substitutes that include:
-- Morningstar Farms buffalo wings (breaded)
-- same brand -- "Chik Nuggets" (breaded)
-- same brand -- "Chik Patties" (breaded)
-- Boca brand breaded chicken nuggets/patties
-- Yves brand chicken skewers (lemon herb flavor)
(All of these except the last item (the skewers) are breaded!.)
I eat the Morningstar Farms chicken products and the Yves skewers!.
I don't know of any vegetarian fish substitutes!.
I believe there are egg substitutes!. I know of Egg Beaters, but I am not sure whether it is/contains real eggs or is completely imitation of eggs!.
My idea about milk is that no animal besides the human drinks the milk of another animal (unless it is bottle-fed cow's or goat's milk by a human), and other animals do not drink milk after infancy!. Plus factory farms -- where most meat, eggs, and milk are produced -- abuse animals greatly in their regular practices!. I have stopped drinking milk and eating eggs and eating much of foods that are mainly milk or eggs (cheese, ice cream, meringue as in lemon meringue pie, etc!.)!.Www@FoodAQ@Com

a piece of information on not drinking milk, i live in the sticks and have worked on farms!. ive seen dairy cows which havent been milked on time!. they are in alot of pain!. drinking milk is not exploitation of anything!. and there is also no pain involved when milking a cow!. so become a vegetarian if you like, but dont take everything they tell you at face value!. do some research, you may be surprised!.Www@FoodAQ@Com
Honestly, I dislike meat substitutes!. They won't fool you, and they taste nothing like meat!. I've found the best way to go is just stop eating them, period!. I've forgotten what they taste like and can't crave them because of this!.
