What shall I make for dinner this evening?!
Any ideas on what I should cook for dinner for me and my boyfriend!? We are both vegetarian, I have lots of stuff like quorn, tinned lentils, chickpeas, olives, cheese and fresh veg, I'd like to make something lovely for my fella, as hes been at work all day, and I've done absolutely nothing, just not sure what!. Well, my boyfriend would eat curry every day if he could, so how about making one with mushrooms, onion, cauliflower, chickpeas, potato and lentil, serve with rice and naan/poppadums!. I also make a lot of dishes such as stuffed peppers, pasta, salad, roast veg (I don't know how hot it s with you!)!. You mention cheese, maybe a cauliflower cheese or something!. Or get him to pick up a take away on his way home!Www@FoodAQ@Com
Lentil soup/stew might be nice!. You could make some side dishes like olives with herbs and hummus using the chickpeas, served with warm pitta bread!.Www@FoodAQ@Com

This recipe also works with black beans but I much prefer garbanzo beans (chickpeas)!.
2 tbsp!. canola or vegetable oil (dont use olive)
1 tbsp!. flour
1 can chickpeas
1 tsp parsley (dried or fresh)
1 tsp!. chili powder
1 tsp!. paprika
1 clove garlic, chopped
1 small onion, chopped
1!. Drain and rinse chickpeas, then mash!.
2!. Season with some of the paprika/chilipowder/parsley
3!. Set aside chickpeas, heat one tbsp!. oil in a skillet and add in the garlic/onion!.
4!. Cook until brown then reduce the heat and add 1 tbsp of flour and season with the rest of the
paprika/chilipowder/parsley!.
5!. Add this mixture into the beans and mash some more!.
6!. Form mixture into patties and fry in the remaining tbsp!. of oil!. Cook each side until brown!.
**this makes like 3 burgers but I make them really big so they might make you up to 5!.
In my experience, this burger goes great with some soy cheese, mustard, lettuce, and a wheat bun!.
Or, this is one of my favorite recipes:
Sweet corn chowder
1 onion – chopped
1 clove garlic
1 tablespoon vegetable oil
2 medium potatoes – peeled and chopped
Sweetcorn – either the corn from 4 ears of sweetcorn or 2 cans of sweetcorn
450ml (1 pint) water
225ml (1/2 pint) milk
1 teaspoon fresh thyme
1 bay leaf
Pinch of cayenne pepper
Gently cook the onion and garlic in vegetable oil until soft!. Stir in the sweetcorn, potatoes, thyme, bay leaf, milk and water!.
Simmer for around 20- 30min or until the sweetcorn and potatoes are tender!. Remove the bay leaf and the cayenne pepper to taste!.
You can now either leave the soup chunky, or whiz using a blender to a smooth soup!.
This tastes great if you have cooked the sweetcorn either on the BBQ or roasted the corn in the oven first!. Adds a new dimension!
Or you could cook some white rice (brown rice will do but I usually prefer whitein this recipe), put half of it in a casserole dish, cover with (prepared) cream of mushroom soup, cheese, and quorn pieces (chicken style works best, but use whatever you have on hand), then layer the other half of the rice, another layer of mushroom soup, then quorn pieces, and cover with grated cheese!.
