The Best Vegetarian Chili in the World --

INGREDIENTS
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn


DIRECTIONS
Heat the olive oil in a large pot over medium heat!. Stir in the onion, and season with bay leaves, cumin, oregano, and salt!. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers!. When vegetables are heated through, mix in the vegetarian burger crumbles!. Reduce heat to low, cover pot, and simmer 5 minutes!.
Mix the tomatoes into the pot!. Season chili with chili powder and pepper!. Stir in the kidney beans, garbanzo beans, and black beans!. Bring to a boil, reduce heat to low, and simmer 45 minutes!. Stir in the corn, and continue cooking 5 minutes before serving!.

Tomato Soup --

INGREDIENTS
1 (28 ounce) can tomato sauce
5 cups water
3 cubes vegetable bouillon
1 bay leaf
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 1/2 teaspoons dried parsley
1 1/2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot red pepper sauce
2 stalks celery, sliced
2 carrots, peeled and sliced
1 small zucchini, chopped
1 cup frozen corn
1/2 cup uncooked ditalini pasta


DIRECTIONS
In a large pot, mix the tomato sauce, water, vegetable bouillon, bay leaf, onion, garlic, Italian seasoning, parsley, sugar, salt, pepper, and hot red pepper sauce!. Bring to a boil, reduce heat to low, and simmer at least 30 minutes!.
Stir in the celery, carrots, zucchini, and corn!. Cover, and continue to simmer 30 minutes!.
Stir ditalini pasta into the pot, and continue cooking 10 minutes, or until pasta is al dente!.

Lentil Soup --

INGREDIENTS
1 onion, chopped
1/4 cup olive oil
2 carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 bay leaf
1 teaspoon dried basil
1 (14!.5 ounce) can crushed tomatoes
2 cups dry lentils
8 cups water
1/2 cup spinach, rinsed and thinly sliced
2 tablespoons vinegar
salt to taste
ground black pepper to taste


DIRECTIONS
In a large soup pot, heat oil over medium heat!. Add onions, carrots, and celery; cook and stir until onion is tender!. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes!.
Stir in lentils, and add water and tomatoes!. Bring to a boil!. Reduce heat, and simmer for at least 1 hour!. When ready to serve stir in spinach, and cook until it wilts!. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired!.Www@FoodAQ@Com

Here is a gazpacho soup recipe which is supposed to be served chilled, which is perfect for the summer right now!. It tastes really delicious, and it barely takes any time to prepare!! My vegan cousin had found it online and made it once and I just fell in love with it! Here it is!.!.!.hope you like it!!


INGREDIENTS:
1 cucumber, sliced into chunks
4 large ripe tomatoes
1/2 bell pepper, any color
2 cloves garlic
1 celery rib, chopped
1 tbsp lemon juice
1/2 sweet onion, quartered
3 tbsp red wine or balsamic vinegar
1/2 tsp salt
dash black pepper
1 tsp chopped fresh parsley
1 tsp chopped fresh basil
1/4 tsp cayenne pepper (optional)
( I usually like to add about 20-25 drops of chili-garlic sauce to make it spicier!. You can find this sauce in most Asian supermarkets!.)


PREPARATION:
Simply combine all the ingredients in a blender or food processor, except the fresh herbs and process until smooth!. Stir in the herbs, refrigerate until cool and serve with bread!.Www@FoodAQ@Com

Vodka- tomato soup

1 T olive oil
2 med yellow onions, sliced
2-3 garlic cloves, minced
4 c vegetable broth
2 28 oz tomatoes, crushed
1 15 oz tomato sauce
6 sprigs parsley
salt and pepper to taste
1 t splenda or sugar

Saute onion and garlic in oil over med high heat for 30 seconds!. Add all other ingrediants and cook for 30 minutes over med low heat

Remove parsley sprigs and puree soup

If desired, add 1/4 c vodka about 15 minutes into the cooking processWww@FoodAQ@Com

I personally am a fan of chilis!. I saute onions, garlic, and pepper (chili and/or bell) in olive oil and soy sauce!. Then I put in the seasonings (cumin, chili mix, etc)!. Then I toss in a few cans of drained beans!. Finally, I put in some cans of diced stewed tomatoes!. I let it bubble awhile, and it's done!.

I'm also a huge fan of faux pho!. Basically, make your own flavorful veggie stock!. Heat it up with some cilantro in it!. (As a bouquet garnis!.!.!. you'll take it out!.) Add some stir fry mix (celery, broccoli, carrots, snow peas!.!.!. tofu is tasty too)!. Prepare some bean thread noodles!. Put the bean thread noodles into a large bowl!. Take the bouquet garnis out of the broth!. Pour the broth and veggies on top of the noodles!. Serve with jalapeno slices, Thai basil leaves, bean sprouts, and lemon wedges for garnish!. My fav!. soups are those "17 Bean Soup Mix" ones!.!.!.!. you know, like the dried beans in a bag!? There are expensive ones and cheap-o ones, they are both GOOD!.

Just follow the directions on the back and substitute veggie broth for the beef broth and obviously don't add any meat if it calls for any!. DELICIOUS!

I asume you are looking for a recipe for a complete portien!? if so beans and grains are complete!.
my favorite is lentils and barley and onions and salt cook till tender and if you desire a little more flavor you can add parsley and stir in after cooked and ready to eat!.Www@FoodAQ@Com
