This ones a recipe from Elizabeth David:
Provence Ratatouille
1kg eggplants
1kg courgettes (zucchini)
1kg onions
!.5kg red peppers
!.5kg green peppers
1kg tomatoes chopped
5 cloves fresh garlic chopped finely
!.5 cup chopped flat leaf parsley
1 cup chopped basil
!.5 tablespoon thyme leaves
Good quality extra virgin olive oil as needed
Chop the onions into small dice!. Cube the eggplants, courgettes and slice the peppers into bite size pieces!.
Add a few tablespoons of the olive oil to a heavy-based casserole pot (such as a Le Crueset) and add the onions!. Stew them slowly until they begin to turn translucent!. Add all other ingredients then stew, covered on a low heat for 45 minutes or until the vegetables are cooked through and very soft!.
Note: We have given the lazy version here!. If you want to transform this dish to a higher plane, then cook the onions, courgettes, eggplant and the peppers in separate dishes and then combine them when soft!.
Add salt and pepper to taste then heat with the chopped herbs to combine further!.
If you want to add an extra little touch to the flavour, remember that Elizabeth David recommends adding some coriander seeds at the end!.
Note that if you leave out the courgettes and peppers then the dish is transformed into a Bohemienne!. If you add capers and red wine vinegar then you are making a Caponata!.
Another one would be Savoury Pumpkin Ravioli =D:
* Ravioli
* 1 1/2 c!. Ricotta cheese
* 1 1/4 c!. canned pumpkin
* 1/4 c!. shredded Parmesan cheese
* 1/2 c!. shredded Mozzarella cheese
* 2 Tbsp!. fresh parsley, minced
* 1 Tbsp!. fresh sage, minced
* 1 tsp!. fresh ground nutmeg
* 1/2 tsp!. salt
* 1/4 tsp!. ground black pepper
* 1/8 tsp!. ground cloves
* 1 package of egg roll wrappers (or pasta sheets for ravioli)

* Sauce
* 2 shallots, minced
* 2 garlic cloves, minced
* 1/2 c!. butter
* 1 Tbsp!. fresh sage, minced
* 1 Tbsp!. fresh parsley, minced
* 2 tsp!. fresh rosemary, minced
* 1/2 tsp!. ground nutmeg
* 1/4 tsp!. ground black pepper
* 1/4 c!. dry red wine
* 1/2 c!. heavy cream
* Sage leaves and parsley sprigs for garnish if desired
Method
Ravioli procedure: Combine all ravioli ingredients except for egg roll wrappers; mix well and set aside!. Cut each wrapper in half, making two rectangular sheets!. Place a heaping teaspoon of pumpkin mixture onto one half of the rectangle, leaving edges free!. Brush edges lightly with water!. Fold the rectangle in half and crimp the edges together using the tines of a fork to form the ravioli!. Dust each ravioli with a bit of flour for ease of separation and set aside!. Start boiling a large pot of water while making the sauce!. Sauce procedure: To make sauce, begin by sauteeing minced shallot and garlic in butter until tender and transparent!. This will take about 5 minutes!. Add herbs and spices, and saute for one minute!. Add wine; cover and simmer 5 minutes!. Add heavy cream and cook just until hot!. When the water comes to a boil, add ravioli carefully!. Reduce the water to a simmer and cook the raviolis for 6 to 7 minutes, or until they are puffed in the center and soft on the edges!. Drain carefully!. To serve, arrange on a large platter!. Drizzle the raviolis generously with the sauce and garnish with sprigs of fresh parsley and sage leaves, if desired!.
Notes: Impressive dish to serve to company--pleases both vegetarian and meat-eating guests!

Cheesy Bread and Butter Pudding
Remove the crusts off sliced bread and butter,
Butter an ovenproof dish and line it
with one layer of bread, add a layer of sliced onion and cheese, a layer of bread, a layer of sliced tomatoes and cheese, finishing with a layer of bread!.
Beat together enough milk, eggs, mustard, salt and pepper to cover (4eggs to 1 pint of milk), pour over bread and leave to soak in for 15/20 mins, Sprinkle with grated cheese and bake in mod oven 45mins!.
You can change the fillings to your choice and add herbsWww@FoodAQ@Com

serve with italian bread, red wine

One of the very best things I love to eat when I am off meat is stir fried veggies on a bed of rice!. I take whatever veggies happen to be in season and saute them in a wok with hot peanut oil!. Served on a bed of rice with whatever flavoring you like!. Butter is nice!. I'm not a vegetarian, but I dont eat meat every single meal either!. Just enjoy good food!.Www@FoodAQ@Com
BBQ big portobello mushrooms!. Brush with olive oil and sprinkle with garlic salt & oregano!. Grill on both sides, and serve on onion rolls with lettuce, tomato & onion slices!.!.!.!.!.!.!. Take one LARGE potato, Use an apple corer and bore a hole through the length and another through at right angles!.
Fill the hole with veggie filling and bake in the oven as normal!.

i tried this one last week and its gorgeous spinach and mushroom lasagne you make it just like standard lasgane but use the spinach and mushrooms instead of the mince meat I'm sure you will enjoy it hope this helpsWww@FoodAQ@Com
