Green vegetables?!


Question: Green vegetables!?
I enjoy eating veggies and I would like to know how to cook green leafy vegetables without destroying its color!. I've seen some restaurants serving cooked but still looking fresh vegetables!.Www@FoodAQ@Com


Answers:
Add a little baking powder or cream of tartar to boiling water!. Put the vegetables in the water for a few seconds and then shock them in an ice water bath!. This will set the color on any vegetable!.

This method is called "par-boiling" or "blanching"!. I've used this method many times for vegetable trays!. It also makes the vegetables a little softer!. Raw broccoli and carrot sticks are so tough sometimes that they can chip peoples teeth!.

Green beans and asparagus come out beautiful when using this method! Just be careful not to overcook!.Www@FoodAQ@Com

For spinach I heat a small amount of olive oil on med high heat and throw in the spinach and stir while it starts to wilt!. Add a little salt and garlic powder!. When most of it has started to wilt turn off the heat and continue to stir!. it will finsih cooking!. When it is all wilted it is ready!.Www@FoodAQ@Com

--Make sure you don't overcook them when you steam or blanch them!.
--Immediately dunk them in cold water when you're done cooking them
--Avoid acids like vinegar or lemon, which harm the color!.Www@FoodAQ@Com
