Well first, let's start with a list of what you should eat every day on a vegetarian diet to remain healthy:
* 3 or 4 servings of cereals/grains or potatoes
* 4 or 5 servings of fruit and vegetables
* 2 or 3 servings of pulses (that's beans), nuts & seeds
* 2 servings of milk, cheese, eggs or soya products
* A small amount of vegetable oil and margarine or butter!.
* Some yeast extract such as Marmite, fortified with vitamin B12!.

When traveling, you can buy these things at groceries along the way and save money:

*fresh fruit
*crackers and pretzels
*trail mix
*nuts and seeds
*peanut butter to put on crackers
*string cheese or soy cheese
*bread with sliced cheese
*soy-based fake meat slices for sandwiches

then, you can go to vegweb!.com or veggietable!.com and find some easy reciples!. A good book is the Students go Vegan cookbook, available at Amazon!. There are lots of forums at vegsource!.com
Personally, I'm a fan of the bean and cheese quesadilla, and while I make it with regular cheese, you can make it with soycheese and it's vegan! Just get a tortilla, spread some mashed refried beans from a can on top, then sprinkle cheese (mix is good, cheddar is good) on top, then put it in the microwave for a couple of minutes, depending on the strength of the microwave!. add some hot sauce, tomatoes, or whatever you like!. You can eat it like that or make a pinching fold in one end, roll one side over, and boom, it's a burrito!Www@FoodAQ@Com

Best suggestion is to give her a list of the foods that you like (which she asked for)!. No one on Answers can tell you that! You know what you will eat and what you won't!. Be thankful and happy that she even asked!.Www@FoodAQ@Com

mock meat, veggie burgers, soy milk (chocolate Silk is the best, it tastes like a shake!), nuts, fruit you like, pb&j sandwiches, salad, anything YOU like that doesnt envolve meat!.Www@FoodAQ@Com

Only you know what you like, and since you haven't given us any help in that department, here is the only list I can come up with!.
