vegan replacement for 1 egg (I use ener-G egg replacer)
fresh fruit (raspberries, blueberries, apples (tossed with cinnamon) mango chunks)
soy or rice milk to make it pourable (or at least spoonable)
1/8 to 1/4 cup olive oil
spray the griddle with oil, medium heat
fruit smoothies or fruit medley
Lunch-
spinach salad
Fresh spinach
sliced strawberries
peanuts
dressing made from olive oil, peanut butter, and soy sauce (equal parts)
veggie sandwich (with lettuce, tomatoes, avocado, cucumber, olives, whatever you like on whole grain bread)
veggie chili
1t chili powder
1/4 t cocoa powder
1/4 t cumin
dash oregano
black pepper
chopped onion, green pepper, carrots
15-oz can black or kidney beans
water (or, so yum, butternut squash soup)
after it's boiling, throw in a few tablespoons of flour!. it will thicken the shoup as well as create a few more chunks!.
Serve over a mashed sweet potato of you want to go all gourmet and really impress someone
Dinner
Stir-fry
diagonally cut carrots and celery
chopped onions and green pepper
cooked whole-grain noodles (start the noodles before you slice the veggies and remember that whole grain noodles cook faster than the pasty white ones)
unroasted cashews or almonds
small amount of olive oil (this works best in a well-seasoned cast iron skillet)
carrots and celery first, onions and bell peppers after the other veggies start to cook
noodles at the end!. do not stir too much, and let the noodles stick just a bit- makes them crunchy
At the very end, mix 1/4 C (or less) soy sauce with a tablespoon of cornstarch, then drizzle it over the stir-fry, cook and stir til it makes the veggies stick together!.
I'm a working woman, vegan, and I can still manage all three of these meals in a day! None of them take more than about 30 or 45 minutes to make!. You spend most of your time chopping vegetables, but I have a handy food chopper than makes short work of it!. And once my big chopping knife gets to rocking on my cutting board, watch out!Www@FoodAQ@Com

noodles at the end!. do not stir too much, and let the noodles stick just a bit- makes them crunchy
At the very end, mix 1/4 C (or less) soy sauce with a tablespoon of cornstarch, then drizzle it over the stir-fry, cook and stir til it makes the veggies stick together!.
I'm a working woman, vegan, and I can still manage all three of these meals in a day! None of them take more than about 30 or 45 minutes to make!. You spend most of your time chopping vegetables, but I have a handy food chopper than makes short work of it!.
