Question: A replacement for raw unfiltered honey!?
I want to make rose jam, but it calls fro raw unfiltered honey!. I'm vegan, so what I can I replace the honey with!?Www@FoodAQ@Com

Vegan Rose jam is lovely made with raw agave nectar (from a health food store) Agave comes from a cactus plant and is totally vegan!. Its thinner than honey, but just as sweet!. I use it for everything-baking, to sweeten tea, homemade soda, etc!. Good stuff! You can also try agar-agar, a seaweed based gelling agent to replace gelatin in cooking-gelatin is made from the boiled bones, skins, ligaments and tendons of slaughtered animals, so definitely not vegan! Some jams use gelatin, others use pectin, but I like the agar-agar (also from health food store) Good luck!Www@FoodAQ@Com
