Vegan Rose jam is lovely made with raw agave nectar (from a health food store) Agave comes from a cactus plant and is totally vegan!. Its thinner than honey, but just as sweet!. I use it for everything-baking, to sweeten tea, homemade soda, etc!. Good stuff! You can also try agar-agar, a seaweed based gelling agent to replace gelatin in cooking-gelatin is made from the boiled bones, skins, ligaments and tendons of slaughtered animals, so definitely not vegan! Some jams use gelatin, others use pectin, but I like the agar-agar (also from health food store) Good luck!Www@FoodAQ@Com
Agave nectar usually replaces honey, but I've never used it in a jam recipe!.Www@FoodAQ@Com
Use the darker version of agave nectar that will find in most natural food stores!.Www@FoodAQ@Com
I think the best thing to use for raw unfiltered honey would be CLEAR KERO SYRUP!.Www@FoodAQ@Com
