Wedding menu vegetarian option?!


Question: Wedding menu vegetarian option!?
I am struggling to choose a vegetarian option for my wedding, most guests will be having beef wellington so I want something that will complement that, appreciate any really tasty vegetarian suggestions!.

Here's some ideas of some healthy, and vegan (and often gluten-free as well) dishes pulled off some menus to give you and your caterer some ideas!. Unfortunately many people are not fans of mushrooms and fish is not vegetarian with Monkfish in particular a touchy choice because it's an endangered fish on the red list!.

It also would be helpful to have more of an idea of when your wedding is because seasonal ingredients are more likely to be spectacular!.

But here goes:

Crispy risotto cakes!. Local asparagus, saffron onions, lemon aioli & arugula

Cassoulet with roasted mirepoix, corona beans, red wine, crisp shallots, spinach, fleur de sel & smoked paprika

Roasted Acorn Squash with Wild Rice, Caramelized Leeks with Roasted Tomato-Sage Broth

Roasted Vegetable Risotto with Tomato, Fennel and Saffron Sauce Cauliflower-Potato Mash & Rosemary-Red Wine-Braised Shallots

I would say no to pasta!. It's just too cliched for vegetarians!.

We had mushrooms with grilled polenta and the vegetarians seemed to enjoy it at our wedding!. For their first course we had a griddled vegetable dish with balsamic dressing!.Www@FoodAQ@Com

I went to a fancy catered meal, not a wedding, but for another event, and the vegetarian choice was Eggplant Parmesan!. Ever since then I have been making myself that meal practically every week because it was so delicious!.

So like Eggplant Parmesan over rice is my suggestion!.Www@FoodAQ@Com

Please don't go with the monkfish option as vegetarians don't eat fish and this could lead to embarrassment!. Amazing that your caterers don't know that!.

goats cheese and tomato tartlet
vegetable thai currry
mushroom parcels
marrow stuffed with rice and tomatos etc (my favourite)
spinach lasagne

I would suggest changing out meat in any of your favorite dishes for portabella mushrooms!. They're thick and meaty!.Www@FoodAQ@Com

eh!? i have no idea what monkfish and whatever else was in that is!. so i would really rather not have it served to me at a wedding!.!.!.!.!. also i'm guessing monkfish is fish and vegetarians do NOT eat seafood!. so another reason i dont' want it served to me :)

the mushroom and spinach thing sounds "different" but also tasty!.

also you think the beef is amazing!.!.!. you don't have to worry about competition among plates as not everyone thinks the same thing is amazing!. plenty of meat eater/omnis i know are not big beef fans!. and vegs definately won't be jealous :P

well, your caterers should know better than to suggest monkfish!. vegetarians do not eat fish!.!.!.!.!.they don't eat animal flesh of any kind, whether that animal lived on land or in water!.

i would stay away from the mushrooms, because they're a "love them or hate them" kind of dish!. i know another user said not to do pasta, but i always love pasta dishes because they're filling and can be made suitable for almost any occasion!. what about a risotto!? they can be done in a huge variety of flavors and would be an elegant dish that would complement beef wellington!.

EDIT: if the people that are coming to your wedding say that they are vegetarians but they eat fish, they are simply not vegetarians!.!.!.!.!.!.!.!.!.!.!.if you would like to take a look, visit www!.vegsoc!.org!. they are the foremost authority on vegetarianism!.

anyway, i'm not meaning to argue about what a vegetarian is or isn't!. i guess the point is that you may want to choose a dish that does not include fish because if someone asks for the vegetarian option and doesn't eat fish, they're left high and dry!. by serving something like eggplant parmesan, risotto, etc!. all of the vegetarians can enjoy it as well as anyone else who doesn't eat beef!.Www@FoodAQ@Com

make a gluten beef and use it insead of the beef!. you can use it ground or in chuncks and you do not have to cook it before putting it in the mix or worry about meat bacteria but it is wonderful for 90% of meat alternatives and can be used almost the same way in most recipes you already have!.

I have the cookbook and find it unique!. It is more alternatives for healthy alternatives to the good life recipes and you do not have to change the recipes you already use, you just make alterations with most recipes!.
alteranatives for complete protien without meat, cottage cheese, meat patties, cheese general slicing and sauce style instead of grated!.
