I have chopped tomatoes, garlic, herbs, tomato puree and then loads of chopped and grated vegetables (peppers, mushroom, carrot, courgette etc) together as a substitute for a bolognese sauce!. It tastes great, is healthy and everybody i have given it to (including meat eaters) say you don't notice no meat in the meal as it's full of vegetables!.

This can be served with pasta or even chips (as in fries in the USA) and if you eat cheese, you can grate some of that over it!.

You can also do the above without the herbs and add curry powder with cauliflower etc and have it as a vegetable curry to serve with rice, noodles or chips (fries again)!.

Yummy, i've just made myself hungry now!. xWww@FoodAQ@Com

Used to be a vegetarian !.!.!. and still enjoy these:

1!. Felafel!!! Chick peas, chopped up, spiced, rolled into balls and deep-fried!. Open up a pita, put in a couple with vegies and techina (sesame seed sauce) and maybe some hot sauce and CHOW DOWN!

2!. Lentil Dahl!. Indian lentil soup, and I'm pretty sure it's all vegie stock!. There are quite a few vegetarian curries too, if you wanna go that way!.

3!. Ratatouille!. Yes, I am referring to the dish made famous by the movie of the same name!. Eggplant is the central ingredient, but everyone has their own take on it!.

Lots of other stuff, but that'll get you started!Www@FoodAQ@Com
