Banana Chocolate Chip Bread Pudding

6 cups 1″ cubed stale bread (about 1 lb)
1 cup chocolate chips
3 ripe bananas, sliced ?” thick
2-2? cups rice milk, almond milk or soy
3 tablespoons tapioca flour
? cup maple syrup
1 teaspoon vanilla extract
? teaspoon cinnamon
? teaspoon ground nutmeg

Preheat oven to 350 degrees and grease a 9 x 5 loaf pan with softened margarine!. Place cubed bread in a large bowl!.

In a small bowl whisk together ? cup soy milk and the arrowroot powder till no lumps remain!. Add 1? cups soy milk, maple syrup, vanilla, cinnamon and nutmeg and whisk to combine!. Pour over cubed bread and stir to coat every piece!. Allow to sit for at least 15 minutes for liquid to soak into bread!. Depending on what kind of bread you use and how stale it is, add more soy milk (? cup at a time) and allow more soaking time till every piece of bread is saturated and there’s a little bit of extra liquid!. Mixture should look mushy and wet!. Fold in chocolate chips and bananas (using hands is the easiest for this), mashing up a little bit of the bananas!. Pour mixture into loaf pan, patting down to make an even top!.

Bake 28-35 minutes till top is puffed, slightly browned and feels firm!. Allow to cool slightly before slicing and serving!. also pudding can be scooped with an ice cream scoop when slightly cooled!.Www@FoodAQ@Com

Delicious Berry Bread Pudding

Ingredients (use vegan versions):

2 cups frozen berries
1 cup dried cranberries
4 - 5 cups cubed whole wheat or multigrain bread slices
2 cups soy milk
3/4 - 1 cup slived almonds or crumbled walnuts, or a combination of the two
1/4 cup maple syrup
1 teaspoon almond extract, optional
2 tablespoon granulated sugar of your choice
3 1/2 tablespoon arrowroot powder

Directions:

In a large bowl combine and mix well berries, vegan bread, soy milk, maple syrup, cane vegan sugar, arrowroot powder and optional lemon juice!. Pour into an attractive glass or corning ware dish!.

Combine nuts, maple syrup and almond extract!. Crumble over main dish (leaving about a 1/4 air space around edge to let steam escape) and bake uncovered for 45 minutes at 350 degrees F!.

I am a former chef and have made it with all the non dairy milks, egg substitutes and protein powder, mashed sweet potatoes, I like a good organic or high protein bread (day old is best), lot of fiber, a few other veggies and I let mine soak over night in the frig and bake it the next day, come out fluffy and more like a souffle, even make non dairy based sauces to!. 6 slices of bread buttered 8 oz of strong cheese 1 pint of milk and 4 fresh eggs,salt and pepper!.cut bread into triangles and layer in a greased dish add some cheese on top,another layer more cheese till all bread is gone then add cheese!.whisk eggs milk and salt and pepper together and pour over!.let it sit for half an hour!.then gas mark 4 until it is golden brown and risen!.Www@FoodAQ@Com
