Here is a good one:
Vegan shrimp and chicken lad na
10 oz wide rice noodles or soba noodles
2 tsp vegetable oil
2 cups reconsituted soy curls or sliced 'chicken' cutlets
7 oz vegan shrimp, sliced into 1/2 inch pieces
3 tbsp tapioca flour or cornstarch
1 tbsp Maggi seasoning
1 1/2 cups broccoli flowerettes
1 tbsp chopped garlic (about 4 large cloves)
1 tbsp yellow bean sauce
3 cups low-salt vegetarian chicken broth or vegetable broth
1 tbsp vegetarian fish sauce or Bragg's Liquid Aminos
1 tbsp vegetarian oyster sauce
1 tbsp sugar or brown sugar
Optional (if using wide rice noodles):
1 tbsp vegetable oil
1 tbsp mushroom soy sauce
chili garlic hot sauce
Using wide rice noodles:
1!. Soak the noodles in warm water for 20 minutes, then rince in cold water!. Add noodles to a pot of boiling water and boil for 1 minute only (don't overcook), immediately drain and rinse in cold water again, and set aside in a colander!.
2!. In a mixing bowl, separate the noodles and toss thoroughly with 1 tablespoon oil and the mushroom soy sauce!. Fry this in a nonstick pan (noodles will stick to a wok so you should use a nonstick pan if possible) until golden brown!. Remove from pan and keep warm!.
Using soba noodles:
1!. Add noodles to a pot of boiling water and boil for about 7 minutes!. Immediately drain and rinse in cold water and set aside in a colander
2!. Toss soy curl or 'chicken' pieces with 1 tablespoon tapioca flour or cornstarch and the Maggi seasoning!. Marinate for 10 minutes!.
3!. Saute garlic in 2 teaspoons oin over medium heat until golden color, then add yellow bean sauce, stir well until fragrant!. Add the soy curls or 'chicken' pieces and vegan shrimp and saute until brown for about 3 minutes!. Add 2 1/2 cups vegetarian chicken broth or vegetable broth!. When broth starts to boil, add broccoli and season with veg fish sauce, veg oyster sauce, and sugar!. Stir well and let cook a bit longer!. Mix remaining tapioca flour or cornstarch separately with the remaining 1/2 cup broth, then stir into the 'chicken' and broccoli until it thickens!. Remove from heat!.
4!. To serve: arrange the fried noodles or soba noodles on a serving plate, spoon the gravy over the noodles!. Serve with chili garlic hot sauce if desired!.

and www!.vegcooking!.com has alot of vegetarian recipes that are easy,
ps!. i agree that you might have wanted to post this somewhere else cause most people here probably dont cook shrimp very often!.Www@FoodAQ@Com

Although some posters were correct in saying your sister is not "fully" veggie!. That is her right!.
I think she might enough a spaghetti with shrimp!. Or perhaps you could make garlic shrimp and have mashed potatoes and creamy spinach!.
it is nice of you to take an interest in your lifestyle and to be considered of her values!.Www@FoodAQ@Com
