Is Miso soup vegetarian !?Www@FoodAQ@Com
Answers:
The traditional recipe for Miso soup is not vegetarian, since it contains Dashi, which is dried smoked fish!. There are vegetarian or vegan variations of the original recipe which are just as delicious!.
Here is a recipe for vegan dashi:
Vegan Dashi (Soup Stock)
Ingredients (use vegan versions):
4 cups cold water
5 inch piece kombu (kelp, find in Asian market)
3 whole shiitake mushroom
pinch dried wakame (kelp, similar to kombu)
2 tablespoon sake
2 tablespoon mirin (sweet rice wine)
1/2 teaspoon sugar
2 1/2 tablespoon shoyu (Japanese soy sauce)
Directions:
Dust off kombu and cut with scissors 3/4 of the way though!.
In a pan, add water, kombu and shiitake and soak for about 1 hour!.
Then, bring the pot nearly to the boil, and remove kombu, add wakame and bring to boil, simmer for 5 min!.
Add remaining ingredients and simmer for 2 mins, drain out shiitake and wakame!.Www@FoodAQ@Com

some of it is, some of it isnt!. many miso soups use a dashi or stock which may contain dried sardines or fish flakes!. you just need to ask what is in the dashi!. if you are making your own, you can easily make it vegetarian!.
here is a vegetarian recipe
Ingredients:
4 cups water
1/3 cup miso
3 green onions (scallions), chopped
1 tbsp shredded nori OR wakame (seaweed)
1/2 block firm silken tofu, cut into 1 inch cubes
dash soy sauce (optional)
1/2 tsp sesame oil (optional)
Preparation:
Bring water to a slow simmer and add seaweed!. Allow to simmer at least 5-6 minutes!. The longer you simmer the seaweed, the less of a salty fishy flavor it will have!.
Reduce heat to very low and add the rest of the ingredients!. Stir until miso is well dissolved!. Its best not to boil the miso, as this will ruin some of it's healthy properties as well as change the flavor of the soup!. Makes 4 servings!.Www@FoodAQ@Com

I'd stick to home versions if you want to make sure it's vegetarian!. I've been to two local Japanese restaurants and specifically asked if the soup was vegetarian!. They say yes, I take a bite, it tastes like fish!. I ask them if there is fish in it and they say yes!. Sometimes the wait staff doesn't quite get the concept of what is vegetarian!.Www@FoodAQ@Com
hi, been a veggie for more than 25 yrs raised a whole family of veggies and now have veggie grand kids!. you can buy miso paste that does not have Fish in it and make your own soup!. there are also instant miso thingies, so sorry i cannot remember brand we found w/o Fish!. you just have to take the time to look at ingredients & knowing the diffrent names that are used for fish powder, the one i see the most is "Bonito"!. it is aginst what i believe religiously speaking to consume meat, fish, or eggs!. and Miso enzymes are really good for friendly flora in tummy!. you know, you may be able to find what you're looking for on the "Whole Foods" website!. thanks for being a veggie! a veggie Mom :)Www@FoodAQ@Com
Traditional Miso is NOT vegitarian!.!.!. its contains Dashi, a Japanese fish base made mostly from dried fish!.
as others have mentioned, you can bypass the Dashi and still have a good soup, it just won't be traditionally Miso!. I wouldn't trust a restaurant, but there are retail packages of Miso that are also vegitarian/vegan:Www@FoodAQ@Com
