Vegetarian suggestions for folks who dont like veggies?!
I want to cut back a great deal on my meat consumption, but I really dont like vegetables!.!.!.!.

Sweetie, let me guess, most all your vegetables come out of a tin can right!? Get yourself a steamer and learn to cook fresh veggies!. The canned stuff tasts like someone already ate it!.Www@FoodAQ@Com
Disguising vegetables as something you like is best, health-wise!. If you know what seasonings and what texture you like, think of the vegetable that matches that texture and you can definitely find a recipe that will use those seasonings that appeal to you!. also, eat grains!. But be smart with grains: no white bread, egg noodles, regular pasta!. You want lentils, rice, beans, whole wheat everything, including pasta, and soy stuff!. A lot of the soy products in the market taste similar to meat, like the Morningstar crumbles and Boca's fake meat chili!.Www@FoodAQ@Com
Learn to cook!. There's lots of cookbook recipes out there!. However, I generally find that ethnic food is pretty good!. Stirfry is pretty healthy, and you can mask the flavor of the veggies until you learn to enjoy them!. If you find a place that makes pretty good food, you can ask how they make it (my mom does this all the time)!. I've grown up eating veggie curries, so I've never heard of an aversion to veggies until I started going to school!. That's when I found out that there's people out there who don't know how to cook veggies!.
Some oldie but goodie american stuff:
steam brocolli w/ salt
stif-fry green beans w/ a bit of soy sauce
steamed carrots
any type of salad (except fruit salad, those are nasty)
Egg plant parmesan
make a pesto out of any green leafy veggie (not just basil) and mix w/ pasta

I would suggest keep trying new foods and vegetables!. When I first went vegetarian I hated all vegetables besides, corn, broccoli and carrots!. Over time my tastes changed and I began to like more veggies!.
I also found that I like most vegetables cooked a certain way(lightly steamed), and if they are over cooked I do not like the taste!. You should see if you like your veggies cooked a certain way!.
Some times it takes me eating the same vegetable numerous times before I actually like it!. Most recently I found out I like zucchini, which I had tried before a few times and hated it!. Taste change over time, so keep trying!.

All these foods I didn't like and it took a few times and different ways of preparing to finally enjoy them!. Er!.!.!.if you don't like vegetables, why would you become a vegetarian!? If you don't mind meat, try leaner cuts (beef, chicken, pork) or fish fillets (just not fast-food ones)
If you're still intent on going veg, try tofu!. Some people love it, some people can tolerate it, and some people just hate it, but you'll never know unless you try!. Most of the time, you can cook it up just like chicken (though you have to watch it to make sure it doesn't dry out too much) and it's mostly tasteless, so you can make it take on any flavor you like!.

puree spinach and mix it into things like spaghetti sauce!.!.!.you wont even notice it's there!. You can mix it into smoothies too
what about corn!? or green beans!? With butter/margarine and salt and pepper!?
oh and puree spinach or peas into your pesto and other sauces and dressings!.
Mix up a salad by adding broken up chips to it and a taco salad dressing
or try sunflower seeds in a salad
raw carrots in ranch
celery with peanut butter

I almost forgot juicing!
you can cover up vegetable taste with fruit taste, or just chug it down and grimace!. It's much easier to drink stuff you don't like compared to eating stuff you don't like!. Apples are good at disguising carrots, and berries at greens!.
also broccoli and zucchini are so good on pizza, you should try that!.
AND, baked fried eggplant:
thinly slice eggplant, dip in nonfat italian dressing then in seasoned bread crumbs!. Bake at 400 degrees for about 30 minutes on a baking sheet, or until brown and crispy!.

Boy! Sounds like you need to aquire some kind of taste for them to keep your diet balanced without taking in a landslide of calories from nuts and fruits!.
I would also suggest, tofu, raw nuts and whole grains!. If you just can't stomach them, you'll need to find a good multi-vitamin to replace what you are missing from the veggies!. But the best way is from the natural sources!.

You don't substitute meat with veggies, you substitute it with an alternative protein, like beans or tofu!. As far as liking veggies, keep trying different ones in new ways until you find some you like!.Www@FoodAQ@Com
