Vegan No Bake Cookies!


Question: Vegan No Bake Cookies
I am looking for a No Bake Cookies!. The peanut butter chocolate oatmeal kind!. But NO BUTTER, I cannot seem to find a recipe without butter!.
I don't have any substitutes for anything!.
I have cocoa, oatmeal, peanut butter, sugar [vegan kind], vanilla, salt!.!.!.
Please please help me!.
Just a simple recipe for no bake cookies, without butter or any crazy vegan substitute!.

You can't use a margarine instead of butter!? If you don't have a fat to use and you can't substitute anything (I often use vegan applesauce as a substitute) then your chances of finding a recipe of that type are pretty minimal I'm afraid!.!.!.

I'd suggest checking out some of the vegan livejournal communities, such as community!.livejournal!.com/vegancooking - this one is my favourite!. Its also a great place to ask this question and request recipes, they're all pretty experienced/seasoned vegans!.

EDIT: I actually did find a reasonable looking recipe- perhaps it will work for you, I'm not sure if you have all the ingredients!. You can substitute canola oil for the margerine, or try leaving it out since you said you can't substitute anything!. I'm sure most oils could work if canola does!.

No Bake Cookies
Serves: 24
Difficulty: Easy
Prep time: <10 minutes
Cooling: 1-2 hours

An easy, versatile recipe for the sweet-toothed types!

2 cups sugar
3 tablespoons unsweetened cocoa powder
1/2 cup vegan margarine
1/2 cup non-dairy beverage (soy, almond, rice, etc)
1 pinch salt
3 cups quick cooking oats
1/2 cup peanut butter (crunchy or smooth)
1 teaspoon vanilla extract

In a saucepan, bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute!. Add quick cooking oats, peanut butter, and vanilla; mix well!. Working quickly, drop by teaspoonfuls onto waxed paper and let cool!.

Notes:
The humidity and the length of the boiling time may affect the cookies ability to set!. Boil the sugar, cocoa, margarine, milk and salt for at least one minute, if not two or three!. You may want to make smaller batches until the cookies set right!.
If you aren’t fond of or can’t eat peanut butter, any other type of nut butter would be a good substitute!.
You can add nuts or seeds for a little extra flavor and texture!.
Using extracts other than vanilla may also work nicely!.Www@FoodAQ@Com

No Bake Peanut butter Chocolate Oat Cookies

Ingredients (use vegan versions):

1/2 cup margarine (Earth Balance)
2 cups sugar (white or brown)
1/2 cup soy milk
4 tablespoon unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

Directions:

I like to make this recipe when I want something sweet in a hurry!. Vegans and non-vegans alike love these!

1!. In a large pot, bring margarine, sugar, milk and cocoa to a boil!. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted!. Do not over boil!.

2!. Take mixture off heat and stir in peanut butter and vanilla until completely melted!. Stir in oats!.

3!. Drop teaspoonfuls of the mixture onto cookie sheets lined with wax or parchment paper and allow to cool!. When cool, turn cookies over to dry the bottoms!.

4!. Store in an airtight plastic container in the refrigerator!.

Enjoy!

In some cookie recipes you can sub 1/3 c canola oil for 1/2 c butter!.

But I'm not sure I'd try that in no bakes cookies!. I think they'd just be greasy and gross!. You'll have to have some kind of fat, though!. Not sure what your objection to vegan margarine is, but Earth Balance is a perfect butter substitute (and non-hydrogenated!.)Www@FoodAQ@Com
