Of course my favorite recipe for gravy is a mushroom gravy

Its really simple
-portobello or cremini mushrooms
-onion
-garlic
-thyme
-olive oil
-salt
-black pepper (fresh cracked works best)
-flour
-mushroom stock(preferably however vegetable stock can be used to sub)
-wine (optional)

Finely chop mushrooms onion and garlic (easier done in a food processor)!. Saute with olive oil (salt and pepper to taste) in a sauce pan!. Sprinkle in a little flour to coat the mixture!. Add thyme immediately after!. let the flour and thyme cook until thyme is fragrant add wine to deglaze pan (optional) then add stock!. Bring to a boil then let simmer until it reaches a consistency you like!. A key thing about most dark gravy's don't be shy with the pepper it what really makes gravy!. If your a new vegetarian you'll love this recipe and swear it's a beef gravy!.Www@FoodAQ@Com

The quickest and easiest is to use a spoon of Marmite or Vegemite dissolved in hot water!. Using that as a base you can add herbs, mustard, or anything else you want!. You can also thicken it with cornflour (cornstarch) if you want a thicker gravy!.
