We use fresh, Just cut each item to the same thickness so it all cooks evenly!.!.Here is my recipe!.
1 squash chopped
1zucchini chopped
1 small onion chopped 3 carrots chopped
2 large potatoes chopped
3 ears of corn or one bag of frozen
!. Heat oven to 400 degrees !.marinate vegetables in your seasoning!. Place in casserole dish (sprayed with Pam or veg oil)
and cook for 20 minutes stir after 10 minutes!.
You can also do this on the grill , heat to 400 and place items in tinfoil sealed very well and cook for same amount of time and turn over after 10 minutes!.Www@FoodAQ@Com

Use fresh veggies always!.
Toss them in some EVOO and seasonings, toss in a glass casserole dish (about 9X13), and stick in the oven at 350-375 for an hour or until you can pierce them easily with a fork!. "How it All Vegan" has a great recipe for a vegetable and tofu roast!.
I have a regular gas oven, and I do everything at about the middle rack!.Www@FoodAQ@Com

Always fresh veggies! And I think you'd do it at about 350 degrees in a casserole dish for about an hour!. Cover dish with foil until the last 15 minutes!. Turn veggies occasionally!. You can use Bragg's Liquid Aminos (which tastes like soy sauce) and herbs + olive oil as a basting liquid!. I have made potatoes, carrots, and onions together and it's great!.Www@FoodAQ@Com
They should be fresh!. For summer veggies like peppers, squash, onions etc, I like to chop them into rough chunks, coat with olive oil and S/P, then roast in a 400' oven for 20 min or so until they soften!.
Cookie sheets work fine as do glass pans!. Use something with a rim to catch any juices from the veggies!.
The exact same thing can be done to grill them!.Www@FoodAQ@Com

the good thing about roasting vegetables is that you can't over or undercook them!. cook them to your desired consistency!. The usual temperature is 375-425 F for about 10-15 minutes!. But if you want them softer, go for 20-25 minutes!. It's up to you!Www@FoodAQ@Com
I use a cookie sheet when I do it in the oven and I only have a regular oven!.
350 to 400, for a few minutes 10-15!. I've only used fresh!. I'm sure frozen would work the same if you thawed them first!.
I love roasted vegi's!.Www@FoodAQ@Com
