What vegetables should i fill sushi with?!

Question: What vegetables should i fill sushi with!?
I'm just looking for something creative!. I am vegetarian, and I am planning to use cucumber and carrots, but i was wondering if you guys have any other ideas to mix it up a little (mushrooms are out)!. I don't have lots of different kinds of vegetables, just main-stream ones!.

We use avocado, cucumber, mushies (I know you don't like them, but we do), carrots, sprouts, roasted eggplant, roasted yams and fried egg--though you're veggie so that might not work!. Cream cheese is also an option, but again, depends on if you do milk!.

We serve with ponzu sauce!.Www@FoodAQ@Com

avacado, root vegetables cut into long slivers like turnips or parsnips, sesame seeds, sunflower seeds

Addition: bok choy or spinach may be good tooWww@FoodAQ@Com

Sweet potatoes, regular potatoes and the stalk part of broccoli are delicious! Do you have celery!? That could be delicious, too!Www@FoodAQ@Com
