Answers:
I would try vegan buttermilk!.!.!.

take about 1/4c soy milk and add 1/4 - 1/2t of lemon juice or apple cider vinegar!. Let it sit to curdle and whisk away!

Another option would be vegan sour cream or soy yogurt!. You can find these at most health food stores!.

Good luck!!.

Get one of those fruit-on-the-bottom Dannon yogurts!. Take your three tablespoons off the top, and then eat the rest!. Some so-called yogurt products are not really yogurt, they're more like a gelatin product!. You could buy a package of yogurt and freeze the rest for a later cooking project!. Actually, the part the yogurt plays in the recipe is to provide moisture, and maybe a little flavor!. I might be tempted to substitute three tablespoons of applesauce!. But now that I think about it, this whole discussion has made me hungry, so I think I'll meander down to the kitchen to see if there is any yogurt left in the frig!.Www@FoodAQ@Com

Have you thought about mashed banana mixed with some soy milk (or rice, oat, nut milk etc!.)!? That's if the flavour will match what you're making!.

Otherwise, I would consider just dropping the yogurt/yogurt substitute and put in some more fat and some more soy milk/water!.

I hope this helps a little bit!!?!
