Question: What do I do with all these veggies!?
Hi, I planted a veggie garden in the spring, now I have veggies coming out of my ears! I was wondering if you guys had any ideas as to ways to fix different dishes with all this stuff!. I am also interested in canning recipes too!.!.!. I have!.!.!.

Cabbage
Califlower
Tomatoes
Hot peppers
green peppers
Cukes
egg plant
beans
Zuccini
Any ideas will be appreciated, I dont want this stuff to go to waste!!!Www@FoodAQ@Com

Cabbage--cole slaw, cabbage soup, kim chi, sauerkraut
Cauliflower--roasted, grilled, stirfried, or mashed for a low carb mashed potato substitute
Tomatoes--marinara sauce, salads, stuffed tomatoes, salsa
Hot peppers--salsa, in burritos, dips, spreads, etc!.
Green Peppers--sauteed with onion and garlic; keep them on the vine longer to produce red peppers
Cucumber--Asian cucumber salad, cuke sticks for dips, hollow out the middle and fill with hummus
Eggplant--grilled, roasted, ratatouille, eggplant parmesan
Beans--stir fry, raw
Zucchini--grilled, roasted, stir fried, use a spiral slicer to peel it into spaghetti shapes and use as a low carb version of pasta!.Www@FoodAQ@Com

I use a black beans, mushrooms, onions and rice mixture to stuff cabbage leaves and green and red bell peppers!. I bake them in a spicy BBQ/tomato sauce in the oven until it's piping hot inside and the pepper is tender and juicy!. Delicious! Give it a try!. If you know how to make beans a rice, the rest is a breeze - just add sauteed, diced onions and mushrooms, make it spicier or saltier to taste, and stuff the peppers!. I use jarred basil oregano pasta sauce, mixed with some vegetarian-friendly BBQ sauce (some BBQ sauces might have anchovy sauce in them, eek)!.Www@FoodAQ@Com

Wow, what a wonderful problem to have!. Besides the obvious salads, you could make stuffed cabbage leaves with cooked rice, tomatoes hot peppers, green peppers and zucchini a little cheese and some salt!.

You can pickle cauliflower, with or without hot peppers, make pickles from cukes and there are a million ratatouille recipes to make with egg plant, zucchini peppers tomatoes, etc!.

Your local food bank might be able to donate your extras to a soup kitchen if you cannot handle everything!.

basically it is roasted vegetables!. do not include the cukes, but everything else is good!. add some onions and garlic, salt and pepper!. Www@FoodAQ@Com
