Why do cucumbers taste bitter?!


Question: Why do cucumbers taste bitter!?
Some of the cucumbers grown on allotments taste extremely bitter!. I wonder if the taste depends on the soil or if it is just the variety!.Www@FoodAQ@Com

Soil and variety are large contributing factors to the taste of any fruit or vegetable!. For example, the acidity of the soil can affect taste and quality of the crop!.Www@FoodAQ@Com

It's got nothing to do with "needing more salt" or the soil condition - it's all down to the sex of the beast!. Take a look at 'growing cucumbers' on one of the sites and they'll tell you which flowers to pinch out and which ones to leave!. Obviously, the ones you get told to pinch out would have formed the bitter fruit!Www@FoodAQ@Com

Probably they've been fertilised because the male flowers have not been removed!. Another reason could be they are old and past their best!.
Usually on the outdoor varieties both the male and female flowers are left on as fertilisation is necessary, but the indoor varieties should have the male flowers removed to prevent the fruits becoming bitter!.
The newer F1 hybrids varieties are usually all female!.Www@FoodAQ@Com

It must be the soil because i have never tasted a bitter cucumber !. Soil can affect the flavour !.

It depends on the variety!. And, as Tx2step says, bitterness tends to reside in the skin and the seeds if it is present at all!.
So try a different variety of cucumber!.Www@FoodAQ@Com

The PH of the soil is of, bitter tasting veggies usually means the soil is to acidic!. Get it tested and add lime!. Www@FoodAQ@Com

I think it might be the fact that the male and female flowers did not fertilize!. Mind you, that would suggest that there would be no cucumber at all!.!.!.!.!.but I just have the feeling that this is the case!.Www@FoodAQ@Com

on some types you have to remove the mail flowers to stop this, mail flowers are the ones with no tiny cucumber behind them!.Www@FoodAQ@Com

Peel them first!. The skin can be bitter!. And, if you're not using Hothouse (or English) cucumbers, take the seeds out!. The seeds can also be bitter!.!.!.!.!.!.Www@FoodAQ@Com
