Hi Ash!

1!. You can make a baked potato with fillings and a side of bread or vegetables or a salad and that would be a filling meal!. You can make mashed potatoes, with a side or other vegetables, choice of seitan, tofu, or tempeh, and maybe tofu scramble or beans or lentils or chickpeas!.

2 That stew/soup sounds good you can add vegetable or mushroom broth and more seasonings such as onions, garlic, bay leaf, paprika, cumin powder etc, and other vegetables like kale and cauliflower, and maybe bean or lentils or chickpeas!.Www@FoodAQ@Com

Potatoes and corn are both starchy!. Add a green salad or a green leafy vegetable!.

The soup/stew will benefit from some seasoning like onions, garlic, coriander, maybe some cayenne papper!. I would also be inclined to add chick peas or tofu, or beans!. Www@FoodAQ@Com

1!. get some fake meat (like tempeh, seitan, chik'n strips), brown it in a pan and put some bbq sauce on it (make sure the sauce is vegan!.!.!.you can make your own!.!.!.it's really easy)!.

2!. Use vegetable broth as the base for your soup/stew to give it more flavor!. Www@FoodAQ@Com

I understand not eating meat!. but don't you miss cheese!? anyways!.!.you should fry the potatoes and make potato wedges!. corn on the side!. and grab some hummus and spread it on some pita bread!. top it off with a good red wine and have a ball!.Www@FoodAQ@Com

Add something with protein, like beans or something!.Www@FoodAQ@Com
